You can be a little flexible with the ingredients, obviously, the corn and cucumber need to go in as they are the main ingredients for this delicious salad, but feel free to swap the peppers for a variety of different colors, or add some chopped celery or tomato too!

As for the dressing, it's simple to make and is a mix of Italian herbs and a hint of sweetness.

For best results, this salad tastes amazing when left to soak in the dressing so you get maximum flavor. So making it ahead the night before is a great idea.

This simple salad is fantastic! I made a few additions of celery, sliced black olives, and finely chopped jalapeno. For the dressing I added chipotle pepper and ground cumin. Great for a summer side dish!

This is the second time I’ve made this salad. People love it!! I added a little extra garlic to the italian dressing because I love the taste of garlic ?. May add shrimp or pasta one of these days for something a little different, but it’s perfect the way it is!

      1. Hi Tina, I wouldn’t advise freezing this salad as the cucumber will turn into mush once defrosted and will be horrible!

      1. If it’s the birds eye frozen then I suggest piping some in a bowl with water to cover and put in the microwave for about 3 minutes then drain and cool with cold water.
        Hope that helps!

  4. I have a similar recipe to this.
I added seeded chopped roma tomatoes.
The dressing was way too much so i ended up pouring most of it out. I had actually cut it to 3/4 C for the recipe and not a whole lot of flavor.
I then Added double the vinegar and little more sugar and a little bit of dried basil and let it set longer and liked it better.
I ate this (as I do with my own version) with tortilla chips. Very good.

  5. I made this colorful salad with the last of our garden’s cucumbers and peppers. My husband raved over the flavor and it will now be a definite repeat each year for our family to enjoy. Thanks for sharing recipe!

  6. My family has a reunion coming up I would love to make this. The reunion has around 200 people so not sure on how much to use for each ingredients. Can anyone help me out it would be more than appreciated.

    1. Hi Tammie, I have just sent Cathy a message as it is her recipe and she will reply as soon as she is able. Thanks for writing in. Your family reunion sounds like it will be fun!
