Pasta Party Salad! This is so easy and delicious! The recipe is flexible so you can swap some of the ingredients to make it exactly to your taste. It's great to take along to parties, potlucks, celebrations or to have in lunchboxes. You can make ahead of time and simply keep refrigerated.

This salad is a mix of lovely pasta, cooked al dente, and scattered throughout are zucchini, peppers, olives and tomatoes. Al coated in a delicious cheese dressing.

You can also add some salami or pepperoni, or a can of tuna fish to this salad. Feel free to make it to your liking with the ingredients you love eating!

It's a very quick and easy salad recipe, all you need to do is cook the pasta, and let it cool. Otherwise, there is absolutely no other cooking involved. Perfect if you are having a hot day!

Ingredients

4 cups or 600 g tri-color rotini pasta
1 green bell pepper, cut in thin strips
1 red bell pepper, cut in thin strips
1 yellow bell pepper, cut in thin strips
2 zucchini, julienned (you can also swap for cucumber)
1 can seedless large black olives, cut in half
1 lb cherry tomatoes, cut in half
1 bottle Bernstein’s Cheese Fantastico Salad Dressing

Instructions

1. In a large pot of boiling water, add 1 tablespoon of Extra Virgin Olive and a teaspoon of salt. Add the pasta and cook for 8 minutes until al dente.

2. Immediately, drain the pasta into a colander and rinse with cold water until cool. Shake colander and continue to let drain.

3. In a large bowl, combine all ingredients. Cover bowl and chill for several hours.

Just before serving sprinkle some Parmesan cheese on top, and enjoy!

Ingredients

  1. My best friend who has since passed used Cheese Fantastico in her pasta salad along with salad supreme from McCormicks and it was the bomb at my wedding reception.

    looks tasty, but I am always a little sad when a good looking pasta salad uses bottled dressing. I like to see recipes for the dressing, as I don’t always plan ahead and like to be able to throw something together at home.

    1. Thanks for your comment Regina, the recipes on Lovefoodies are there to inspire and encourage people to be creative. This recipe, along with the majority of others can either be followed rigidly or used as a guide and you can add or omit any ingredients in this salad and make it to your liking. We will never be able to please 100% of people with any single recipe, but for convenience, inspiration and guidance, this is a good salad of which, if you are confident in your cooking skills, you can build on as you so wish!

        Absolutely. I only mention this because I have been in search of a good home-made dressing for pasta salad specifically, but so far all the recipes I’ve found have suggested using bottled dressing, or a seasoning packet.

    1. Haha! Yes Gina, it most likely is! Karren makes this salad often and changes some of the ingredients for variety, which means it’s like a new salad every time! (keeps her family interested!!)
