This Honey Mustard Chicken Pasta Salad is a great way of using up leftover chicken,
and with the delicious flavors and textures of all the other ingredients, you're sure to have a wonderful salad for dinner, to take to work, or for a buffet!
Chicken salad is a staple in our house.
We often have leftover chicken or rotisserie chicken, and rather than just eating plain leftovers,

this is a great way to make up another meal that's different.
You can be flexible with the ingredients, so feel free to add more of less tomatoes and cucumber, or even leave them out if you don't like them.
The main thing which brings this whole dish together is the honey mustard dressing.
You can use French or English mustard, or like here, we have used whole grain mustard.
This salad is a good dish to take to a potluck or party.
It just needs to be kept chilled and simply serve in a bowl when you're ready.
You can make it up the day before, so it makes life even easier!
If you have leftover Turkey from Thanksgiving, then you could always substitute the chicken for turkey. Be as flexible as you like!
Ingredients
The Salad
2 cups or 300 g macaroni or pasta of your choice
10 oz or 300 g cooked chicken, tear into rough pieces
½ cucumber cubed
4 tomatoes cubed
½ Red Onion, sliced
¼ cup chopped cilantro, coriander
1 small can or roughly 200 g / 1 ½ cups sweet corn
salt & pepper
The Dressing
3 tbsp reduced-fat mayonnaise
1 heaped tsp wholegrain mustard
1 tsp clear honey
Double up on the dressing if you like your salad 'wetter'.
Instructions
- Boil the pasta, then cool under running water and drain.

Make the dressing by mixing the mayonnaise, mustard, and honey in a large bowl and loosen with a little water to make a dressing the consistency of thick yogurt.

In a serving bowl, add all the ingredients and combine.

Season with salt and pepper to your liking.
Serve chilled.
