This delicious cauliflower and pea salad recipe is very simple to make, and the homemade dressing is creamy and holds the whole salad together giving you a really tasty side dish for any meal.
The addition of crispy bacon sprinkled on the top adds to another flavor and texture dimension, giving you a salty taste up against the creaminess and slightly sweet salad dressing. It's a combination which is so delicious!

This is a great salad to make ahead of time. We recommend at least an hour refrigerating so the flavors have time to develop, but you can make this the night before, and just sprinkle the bacon and cashew nuts when you're ready to serve.

There are some ingredients in this easy salad that you can swap, for example, if you don't like chickpeas, you can either leave them out or add some extra bacon if you're looking for more protein.
The celery adds a lovely crunch and gives a refreshing taste to the salad. If you're not a fan of celery, swap for cucumber.

Ingredients
The Salad
Fresh cauliflower, cut into bite-size pieces
Frozen peas, thawed and drained
1 Scallion
1 Small onion, diced (red onions also taste good in this)
3 or 4 sticks of celery, diced
2 rashers cooked bacon
1 cup cooked and drained chickpeas (optional)
2 Tablespoons cashew nuts
The Dressing
1 cup / 240 g miracle whip or your choice of mayo
4 Tblsp buttermilk
1 tsp sugar
Salt & pepper to taste

Instructions
- Prepare the cauliflower by cutting into bite-sized pieces.
- Cook the bacon until crispy and chop into small pieces.
- Drain the chickpeas.
- Defrost the peas on some kitchen paper.
- Dice the onion and celery
- Chop the scallion.
- Make the dressing by adding all the ingredients to a bowl and stirring until well combined. Season with salt and pepper and taste.
- Add all the salad ingredients EXCEPT the bacon and cashew nuts to a large mixing bowl and pour the dressing over.
- Using a large spoon, carefully combine the dressing so all the salad is coated.
- Transfer to a salad bowl and sprinkle the bacon and cashew nuts on the top. Cover and refrigerate for an hour before serving.
