I am a huge fan of anything chicken, and when it comes to Southern Fried chicken, I could eat it often. However, deep frying food isn't particularly healthy as we all know, so more and more, we are using our ovens and more recently, air fryers in order to reduce the amount of oil used in cooking.

I do find that deep-frying chicken does give it that added flavor, only you can get from deep-fried chicken, so I haven't tried to replicate that. I don't think you can!

What I've done with these chicken portions is prepared a lovely marinade, using a homemade jerk seasoning recipe, and then marinaded the chicken pieces in a buttermilk mixture (that's basically milk and acidity, in this case, lemon or lime).

The buttermilk gives the chicken flesh a tender texture and keeps it moist, to ensure you don't end up with dry chicken.

The jerk season adds a little spice, it isn't chili hot spice, although if you prefer, you can always add some extra heat to your seasoning.

This oven-baked chicken recipe is ideal for both a weeknight dinner or if you're going along to a party or potluck.

You can eat these hot or cold, served with a proper hot dinner of various side dishes, or serve alongside some different salads and buffet dishes.

The recipe is very easy, and the jerk seasoning is great if you decide to make up a batch. It will store in an air-tight jar for a few weeks, so at least you can use it for some other recipes too!

Ingredients you'll need

The Chicken

  • Chicken Portions - We've used drumsticks and thighs. You can use wings, breasts, or a combination to suit.

The Coating

  • Flour - All Purpose
  • Eggs, beaten

The Marinade

  • Milk
  • Zest and Juice of lime or lemon
  • Sugar
  • Pepper and Salt to season.
  • Jerk Seasoning

The Homemade Jerk Seasoning

  • The ingredients below make around ½ cup.
  • Sweet paprika
  • Garlic powder
  • Ground allspice
  • Ground nutmeg
  • Cayenne pepper (more or less, depending on preferred spice level)
  • Salt
  • Freshly ground pepper
  • Sugar

Instructions

  1. Make up the jerk seasoning if you don't already have any in your pantry.

2. Add all the ingredients for the marinade mixture to a large bowl and add the chicken portions. Cover and refrigerate for at least 30 minutes.

3. In a large bowl, mix the flour and all the seasonings plus zest in a bowl.
In a separate bowl, add the eggs and lightly beat. Set aside.

4. Take the chicken from the refrigerator and coat each portion in the beaten egg, then the seasoned flour. Then coat again in egg, and finally flour, so you are double-coating the chicken.

5. Place each coated chicken piece on a lightly oiled baking tray. Repeat the coating process until all the chicken is coated.

6. Lightly drizzle some olive oil over the chicken.

7. Bake in the oven at 220 C, 475 F for 35 minutes, depending on the thickness of your chicken portions. Ensure the juices run clear and the chicken is golden.
Halfway through baking, use a spatula and carefully turn the chicken pieces over, be careful not to break the crispy coating.

Serve with your sides such as oven-baked fries, creamed corn, caramelized onion dip, and jerk corn on the cob, creamy coleslaw, and delicious corn and cumber salad!
