For this recipe, we're going to show you how to prepare and roll a chicken breast, and also how to stuff the chicken breast. It's an easy recipe, and ideal for an outdoor grill, or you can bake this in the oven too.
The flavors of the chicken are wonderful! The homemade dry rub has got a mixture of dry herbs, and then when you add a coating of BBQ sauce on top when it's cooking, the smell and flavor is really delicious!

You can choose your favorite BBQ Sauce to add to the marinade for even more of a punchy flavor, perhaps a BBQ sauce with a kick of spice if you like spice, or a sweeter sauce. The breasts are moist and juicy, and of course full of flavor!
Serve these BBQ stuffed breasts with some of our grilled corn skewers and or mushroom and zucchini vegetable skewers and some lovely soft Aloha pineapple bread rolls. There you have a perfect meal.

2 medium chicken breasts
The Dry Rub
½ tablespoon salt
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon thyme
1 tablespoon oregano
1 tablespoon parsley
2 tablespoon paprika
1 tablespoon olive oil
Some of your favorite BBQ sauce for basting.
The stuffing
4 Slices of your favorite bacon. Can be smoked if you like.
2 scallions / Spring onions
1 Green pepper, sliced.
Instructions
1. Cut your chicken breasts down the middle, but not all the way through, and then place in a bowl with the above dry rub ingredients. Combine everything well and rub into the meat.

2. Lay the chicken flat, and inside, lay a slice or two of bacon, you may need to cut the bacon rasher into two so it fits nicely.
Lay a couple of slices of green peppers and some scallions, then roll the chicken breast up and tie it with some kitchen string. Repeat for the second chicken breast.
3. Brush with BBQ sauce, then place on the BBQ for about 30 - 40 minutes at 350 F / 180 C / Gas 4
or in the oven at the same temperature.

Allow to rest for 10 - 15 minutes, then remove the string and slice up for serving and ENJOY!
