Whichever way you choose to eat this, you can be assured it is really very creamy, tasty and oh so good!

The type of melon I have used in this recipe is Cantaloupe (or Muskmelon). They were on offer at my local supermarket so I bought a few and decided to make some ice cream with one of them.

You can use other types of melon, such as honeydew, Galia, and other yellow colored melons. Do not use the red Watermelon as the water content is too high for this recipe and I would be afraid it probably won't set for you.

I have made the ice cream using my little ice cream machine, however, if you don't have one, I have popped some directions below if you want to do it without!

I also made a lovely summery Peach Melba ice cream, a Strawberry Ice Cream and a really creamy blueberry and lemon ice cream. Check out our other ice cream recipe which uses ONLY fruit!

So I hope you will enjoy this ice cream as much as our family does.

Prep time 

30 minutes

Cook time 

5 Minutes

Serving size 

1 Loaf pan. Roughly 1 pint in liquid. 10 - 15 scoops

Equipment 

1 loaf pan or similar size container

Ingredients 

10 fl oz or 300 ml double or heavy cream
1 cup or 200 g regular sugar ** taste it and add more to your taste.
1 whole very ripe (about 1lb 3 oz or 600 g) cantaloupe / muskmelon / honey dew melon, peeled, deseeded and chopped into small chunks
juice 1 lemon

Instructions 

1.Add the cream and sugar to a saucepan and bring to a gentle boil then remove from heat.

Give it a stir to make sure all the sugar has dissolved.

2. Add the prepared cubed melon and lemon juice to a food processor and puree until smooth.

Then add the cream to the pureed melon and blend until everything is fully combined.

3. Pour the mixture in to the ice cream machine and churn until thick or semi frozen.

This should be about 30 minutes.

Then transfer to your freezer proof container and freeze until it is hard to your liking.

Serve with your favorite berries or in an ice cream cone!

If you do not have an ice cream machine, you can place the mixture (in it’s mixing bowl) in the freezer and after 2 hours, use an electric whisk and mix it.

Return to the freezer for another 2 hours, then repeat once more with the electric mix, before finally returning to the freezer until completely set.
