Easy Strawberry Ice Cream! This is so yummy! It's egg free, creamy and jam packed with strawberries.
I have made the ice cream in my ice cream machine, but if you don't have one, don't worry. I've added some instructions at the end if you want to make the ice cream without a machine.

This is delicious served just as it is, on its own, and of course you can serve it in an ice cream cone or alongside a lovely pie. Whichever way you choose to eat this I am sure you will love it!

For this recipe, I needed to add some extra sugar in the form of honey, for my taste. My strawberries, although very red and ripe, weren't as sweet as I had been expecting, so I advise you to have a little taste when you are mixing so you know whether to add a little extra sweetness to your liking.

1 Loaf pan. Roughly 1 pint in liquid.

You will need

1 loaf pan or similar size container

Ingredients you'll need

  • Double or heavy cream
  • Regular sugar ** taste it and add more to your taste.
  • Fresh strawberries, washed and hulled.
  • Lemon juice
  • Honey (optional)

Instructions

1.Add the cream and sugar to a saucepan and bring to a gentle boil then remove from heat. Give it a stir to make sure all the sugar has dissolved.


2. Add the prepared strawberries and lemon juice to a food processor and puree until smooth. Then add the cream to the pureed melon and blend until everything is fully combined.


3. Pour the mixture into the ice cream machine and churn until thick or semi-frozen. At this point, have a taste and see if you need to add some honey for extra sweetness.

This should be about 30 minutes. Then transfer to your freezer-proof container and freeze until it is hard to your liking.
Serve with your favorite berries or in an ice cream cone!

How to make ice cream without an ice cream maker

If you do not have an ice cream machine, you can place the mixture (in its mixing bowl) in the freezer and after 2 hours, use an electric whisk and mix it.

Return to the freezer for another 2 hours, then repeat once more with the electric mix, before finally returning to the freezer until completely set.

  • 10 oz fl or 300 ml double or heavy cream
  • 1 cup or 200 g regular sugar ** taste it and add more to your taste.
  • 1 lb or 600 g Fresh strawberries, washed and hulled.
  • juice 1 lemon
  • 3 - 4 Tablespoons of Honey, optional

Instructions
