If you've ever tried the classic Peach Melba dessert, (incidentally it's been around since the late 1800's so it's a classic, vintage combination of flavors!), you will know that the combination of peaches and raspberries is a perfect match.

They compliment each other nicely, with the juicy sweetness from peaches against the slightly sharper flavor of raspberries.

What is Peach Melba?

Traditionally, a peach melba is a peach, halved, usually with a scoop of vanilla ice cream positioned in the center of the up-turned peach half and then drizzled with raspberry sauce.

Back in the 1970's, this dessert was in most restaurants, and would often come in 'peach melba' glasses which had dry ice in between the glass to give you a dramatic effect!

Nowadays, you don't see peach melba in restaurants, so what better than to create a peach melba recipe, using the main components, namely, peach, cream, and raspberries, so you can enjoy this wonderful chilled dessert at home! This peach and raspberry ice cream would be great for a party, whether that is over the Summer months or to enjoy during the Christmas holidays. It is perfect for any occasion.

We have used fresh peaches here at our Lovefoodies kitchen. We try and use what is in season and it just happens to be July whilst I write this! We've tried this using canned peaches and it works well. Just make sure you get rid of the syrup or juice from the can as you don't want all that extra liquid.

For this ice cream, we haven't used any eggs, so you don't need to worry about raw eggs in ice cream. We've also only used a little amount of cream. The rest is pretty much peaches, pureed. That is what is most of the volume in this ice cream, and if you have particularly sweet peaches, you may even be able to lower the sugar quantity too!

For the raspberry coulis, we've made it from scratch. It takes a matter of minutes to make and if you are going to use your blender to make this ice cream, then it's not much effort to whizz the raspberries in it first to make the coulis.

You will have a little coulis leftover, and you can use that to drizzle over the ice cream too if you want, or save it in the fridge for another dessert, such as our peach and raspberry pound cake (that is so delicious too!).

1 lb loaf pan (around 10 - 12 scoops)

Ingredients

Peach Melba Ice Cream, ingredients

4 peaches (roughly 350g once chopped)
1 cup or 250 ml milk
¾ cup or 180ml heavy or double cream
½ cup or 130 g regular sugar
3 tablespoons raspberry coulis

For the raspberry coulis, you can easily make your own using our quick raspberry coulis recipe, or use shop bought raspberry sauce.

Can I use canned or frozen peaches?

Yes you can!

Instructions

If using an ice cream maker, make sure you pop the bowl in your freezer the night before so it is absolutely freezing cold!

  • Remove the stone from each peach and chop them into smaller pieces so they will fit in your blender.
  • Add all the ingredients to your blender EXCEPT the raspberry sauce and blitz until you have a puree.

  • Add the peach mixture to your ice cream maker and churn for 20 minutes.

  • Add 3 tablespoons of raspberry puree and using the end of a spoon or chopstick, swirl it around a little.

  • Transfer the ice cream to a loaf pan or container suitable for the freezer and smooth the top with a spatula and press down a little so its more compact.

  • Cover with plastic wrap and freeze for a minimum of 1 hour.

We suggest freezing for 1 hour for a soft whipped consistency, and 4 hours for a harder ice cream.

How to make ice cream without an ice cream maker

If you do not have an ice cream machine, you can place the mixture (in its mixing bowl) in the freezer and after 2 hours, use an electric whisk and mix it.
Return to the freezer for another 2 hours, then repeat once more with the electric mix, before finally returning to the freezer until completely set.
