A quick and easy recipe for how to make a simple raspberry coulis to use as a fruity topping for cheesecakes, dessert sauces, pour over ice cream, or swirl into yogurt.

Making a simple raspberry coulis can elevate another recipe with extra flavors and sometimes when you just need a sauce to go with a dessert, then you can make a quick coulis to drizzle over.
This is such a versatile recipe, and can be used on so many things, such as drizzling over a simple fruit salad, or to add as a swirl in our peach pound cake or swirl it into a no bake peach cheesecake. You could even use it instead of blueberries in our Blueberry Cream Cheese Swirly Bread!
As you can see, we have used raspberries for this fruit coulis recipe. You can of course use strawberries, blackberries or any other berry. The trick to making this is to have a taste of the fruit you're using first so you can guage how much sugar you need. Add a little at a time until you get the sweetness you are looking for.
Fruits can often be sharp or sweet, depending on the season and what the fruit is, so taste as you go along when adding sugar and you'll get the sweetness just right!

5 oz or 150g Raspberries, fresh or frozen
2 Tablespoons powdered sugar
1 teaspoon lemon juice
Instructions
Make the raspberry coulis by adding all the ingredients to a bowl

and using a hand blender, blitz until smooth.

Pass through a sieve to remove seeds (optional)
NOTES:
- If you pass the coulis through a sieve, the total amount at the end will reduce to around ½ cup.
- If you are adding the coulis to a pre baked item such as a cake, you don’t need to pass through a sieve first as the seeds will not be noticeable after baking.

Storage
Will keep refrigerated in an airtight jar for up to two days. We don't suggest you freeze coulis
