Easy Strawberry and Coconut Trifle!
Oh my goodness this is a delicious recipe!
The idea came about following our 30 Day Recipe Challenge we take part in each month with a group of talented bloggers.
This month's theme was to create a No Bake Dessert. Of course, for those of you who know Lovefoodies, we LOVE our trifles, puddings and cake. So it was no surprise when I thought up a no-bake dessert which would combine many of my favorite ingredients to give a very easy and tasty dessert which would be perfect for a week day or weekend occasion.
This is also a great recipe to make for a party, potluck, Christmas, Thanksgiving, Easter, and indeed any holiday really! These days it is easy to get good quality strawberries all year round, but of course, for the maximum sweetness, summer is the best time to enjoy these delicious fruits.
The trifle is made up of a few simple layers, and when eaten together, your taste buds really do sing aloud with the freshness of all the flavors which perfectly compliment each other.
For this recipe, I have made the coconut pudding and strawberry sauce from scratch. It is easy enough to do and doesn't take much more time than if you were to buy the ready-made products, and of course, from scratch is always so much more pleasing.
The lady's fingers I have used are really lovely! Once they absorb the strawberry sauce and coconut pudding, the texture becomes very cake-like, just as in a trifle.

Cook Time: Nil
Serves: 4 persons
Ingredients:
For the Coconut Pudding:
**You can also use instant Coconut Pudding mix. You will need to make up roughly 1 pint
⅓ Cup or 65 g Sugar**
2 Tablespoons Cornstarch
Pinch of salt
2 Cups or 470 ml Coconut Milk
2 Egg Yolks
½ Teaspoon Vanilla Extract
**Adjust the sugar to your taste
Other fillings:
1 ½ Cups Fresh strawberries, cubed
6 Lady Fingers (savoiardi)
1 Cup or 250 ml Fresh Whipping Cream
1 Tablespoon Powdered Sugar
The Strawberry Sauce:
1 Cup Fresh strawberries, Pureed
1 Tablespoon Powdered sugar (to your taste)
1 Tablespoon Shredded Coconut (for sprinkling on the top)
Instructions:
1. First, make the Coconut Pudding. See here how to make our VANILLA pudding. Simply swap the regular milk quantity for coconut milk, using our Lovefoodies Vanilla Pudding Recipe. Allow to completely cool before adding the final whipped cream layer at the end. (see below)
2. Make the strawberry sauce by adding the strawberries to a blender with the powdered sugar. Taste the sauce as you add the sugar so you can add more or less to your preference.
3. In a shallow dish, add the Strawberry Sauce and dip each ladyfinger in the sauce completely, then remove and cut each finger into 3 pieces. Line the trifle bowl or glasses with the fingers. **Keep the remaining strawberry sauce as we will use it to drizzle in and on top of the trifle.
4. Slice the strawberries in to bite-sized cubes. You can save some for the top for decoration too if you'd like to!
Then add a layer of strawberries on top of the fingers. Then a drizzle of strawberry sauce. Use a spoon and add a layer of coconut pudding, then another layer of strawberries, then another drizzle of strawberry sauce, then the remaining coconut pudding.
You might have to use a knife and poke the filling around a bit so the pudding reaches in between the cracks.
At this point, if you are making ahead, cover the surface of the pudding with plastic wrap and refrigerate. Once chilled, add the whipped cream layer below.
5. Whip the cream to stiff peaks. Pipe or spread the cream over the top as your final layer and drizzle some strawberry sauce and garnish with a few strawberries and shredded coconut if you wish. Chill until ready to serve.
Allow to chill for 4 hours so the pudding has time to soak into the lady's fingers.
