Then, we have a wonderful creamy layer of homemade vanilla pudding, then a layer of peach slices, covered in one more layer of yummy vanilla pudding and then topped off with a generous spread of freshly whipped cream and a sprinkle of coconut.

My oh my! You just have to try it yourself then you will know exactly why I chose to call this a dreamy dessert!

This recipe makes for 6 -8 servings. Of course, if you wanted to make for a crowd, simply increase all the ingredients.

6 - 7 sponge fingers (savoiardi)
¼ cup or 118 ml Peach Juice (from the can)
8 oz or 411g can of sliced peaches OR 4 ripe peaches, sliced.

For the Vanilla Pudding

⅓ Cup or 60g of Sugar
2 Tablespoons Cornstarch
2 Cups or 500ml Milk
2 Egg Yolks

For the Topping

1 cup or 235ml Whipping Cream
1 Tablespoon Powdered Sugar
4 Tablespoons Shredded Coconut (optional)

You Will Need a suitable dish, mine measured 9 inches x 6 inches and 3 inches deep

Instructions

Make the vanilla pudding as follows: In a saucepan, add the sugar, cornstarch, and milk. Add a little milk first and combine, then add the remaining milk.

Stir so there are no lumps and bring to a gentle boil, stirring all the time. As soon as it boils, remove from heat.

In a bowl, add the egg yolks and lightly beat. Then slowly pour in half of the hot milk mixture, stirring as you pour.

Return the bowl mixture to the milk saucepan and bring to a gentle boil, stirring all the time until it starts to boil.

At this point, have a little taste to see if you have the amount of sweetness to your liking.

If you need more, simply add a tablespoon of sugar at a time and taste as you go along.

Remove from heat, add the vanilla extract and stir.

Then transfer to a bowl and cover with plastic wrap to cool.

Arrange the sponge fingers in a dish so they cover the bottom. Then pour the peach juice all over.

Spread half of the vanilla pudding over the lady's fingers

then arrange the peach slices on top. (Hold some slices back for decoration on the top if you wish)

Spread the remaining vanilla pudding over the peaches.

Cover the surface of the pudding with plastic wrap and allow to chill completely for at least 4 hours. Overnight is even better.

Whip the cream and powdered sugar to stiff peaks then spread over the pudding mixture.

Storage

This dessert will keep fresh for 2 days, covered and refrigerated. You can make all but the whipped cream topping a few days ahead and let it chill, and then add the cream topping before serving if you're short on time.

Substitutes

  • Vanilla pudding - Instead of making vanilla pudding from scratch, you can buy the ready made version. (Custard in the UK). It will be slightly runnier than this recipe, so it is not likely to set firm. You will need to add 1 tablespoon of cornstarch to it and heat it through until it is thick.
  • Peaches - we used a combination of canned and fresh peaches. You can use just canned or just fresh. if using frozen peach slices, defrost them on some kitchen paper first to remove excess liquid.
  • Sponge fingers - sponge fingers can be found in the baking section of the grocery store. We bought ours in Aldi when they were a special buy (Italian week I think). Amazon also sell them, called ladyfingers.
