This delicious smores trifle recipe has been generously shared by one of our biggest Lovefoodies supporters, Peggy Mitchell.

This trifle is ideal for taking along to a BBQ, or a potluck. It's got all the ingredients to make this a special sweet treat, and great for sharing!

So we have layers of marshmallows, graham crackers, toffee bits, mini chocolate chips, all mixed with a homemade chocolate cake, and topped with freshly whipped cream. So you can see how we get the name of S'mores trifle from!

What you need

9 x 13 cake pan and a trifle bowl!

Ingredients

The Cake

1 cups or 200 g regular sugar
½ cup or 120 ml vegetable oil
1 egg
½ tsp vanilla extract
1 ½ cups or 190 g all-purpose flour
⅓ cup or 30 g cocoa, unsweetened
1 tsp baking powder
1 tsp baking soda
¾ tsp salt
½ cup or 115 ml coffee, room temperature *
½ cup or 115 ml buttermilk
1 cup or 100 g of marshmallows
¼ cup or 35 g crushed graham crackers
¼ cup or 35 g toffee bits
¼ cup or 35 g of mini chocolate chips

Water can be substituted for the coffee but its purpose is to enhance the chocolate flavor of the cocoa

Topping & filling layers

¼ cup of toffee bits
¼ cup or 35 g graham crackers out of the box
¼ cup or 35 g of mini chocolate chips
¼ cup or 25 g mini marshmallows
*keep some of the above ingredients back for decorating on the top of the trifle.

Whipped cream

½ cup or 60 g powdered sugar
4 cups or 950 ml

Instructions

Make the cake

  1. Preheat oven to 350 F, 180 C, Gas 4. Grease and flour 9 x 13 pan and set aside.

2. Using an electric mixer, combine sugar, oil, eggs, and vanilla; beat for 1 minute.

3. Gradually add remaining ingredients (alternating wet and dry) and beat for 2 to 3 minutes at medium speed.

4. Pour batter into prepared pan and bake for approximately 30 - 35 minutes or so until cake is done.
Cool for 5 minutes and carefully remove from pan and allow to cool.
While this is baking make your whipped topping

Make the Whipped Topping

Beat the cream and sugar until you have stiff peaks
After the cake is cooled start assembly

Assembling the trifle

1. Cut your cake in to 1 inch cubes

2. Layer the bottom of your bowl with a layer of whipped topping and a handful of your topping ingredients and then a layer of cake.

Continue to repeat till you have whipped topping left on top and then you add the toppings to the top of your trifle and let it chill approx. 1 hr. and enjoy!
