Wow! Let me introduce you to a lovely recipe for great tasting chicken using an easy BBQ marinade.

I usually marinade my meat in the refrigerator for a few hours before grilling, to make sure the flavors really taste good. Doing this will also keep your meat juicy and tender during the cooking process.

We've simply grilled the chicken pieces over the BBQ and served with some delicious Jerk Corn Skewer Kebabs, a bowl of homemade coleslaw, and some easy-baked oven fries. Delicious!

Ingredients

6 - 8 Chicken Legs / Wings / Thighs

The marinade

4 Tablespoons Dark Soy Sauce
2 Tablespoons Chinese Rice Wine or Dry Sherry
4 Tablespoons Honey
1 Teaspoon ground ginger
½ teaspoon salt
2 Tablespoons Hoi Sin Sauce

  • add some siracha sauce too if you like hot!

Instructions

  1. Prepare the chicken by making thin cuts in the flesh with a sharp knife. ** This is optional, I do this so the sauce can get right inside the meat.
  2. Transfer the chicken to a zip-lock bag.
  3. In a bowl, add all the marinade ingredients together and stir.
  4. Add the marinade to the chicken and refrigerate for a minimum of one hour. Overnight is best for the marinade to really infuse.
  5. Place on the grill or roast in the oven at 400F or 200C and cook until juices run clear. During cooking, if you have any marinade left over, you can brush some over the meat whilst it is cooking for added flavor.
