Bill's Chicken Salad is a great family recipe, very easy to make and great tasting. Serve in lettuce wraps, sandwiches, on it's own, the sky's the limit! Gosh this is a good recipe! Bill's Tasty Chicken Salad is such a simple recipe, yet the flavor and textures are amazing.
The addition of celery and pecans makes for a lovely crunch and flavor combination with the creamy chicken. For those of you who don't like celery, try it in this salad anyway! I say this because I actually hate celery, but when I made this chicken salad, I followed the recipe exactly, including adding the celery and I was pleasantly surprised. I still won't eat celery in anything else, BUT... it goes in this salad every time I make it!
This is a great salad recipe to serve as a main meal, or to have as party food, or appetizers, perhaps with lettuce wraps, crackers, wraps, sandwich bread, fillings in vol au vents.. the list is endless!
This is always a popular dish at pot lucks and parties, and of course, not forgetting the holiday times, such as Thanksgiving or Christmas, when you could also use up some left over turkey. How flexible!

Sally has been making this tasty chicken salad recipe for years, and has been passed to her by her nephew, Bill. It's such a popular family recipe that Sally felt it simply must be shared with you all!
So please enjoy and also, feel free to make it your very own by adding or swapping some of the ingredients, such as the pecans for walnuts, or perhaps adding some apple or raisins too. I've made this several times, and have added dried cranberries and chunks of Granny Smith apples in it too, plus some chopped cilantro. It really is a flexible recipe.

2 - 4 Persons
2 Cooked Chicken Breast
1 Small Onion
2 Ribs Celery
4 Tablespoons Light Mayo
½ Cup Pecans
Salt and pepper to taste
1. Prepare the ingredients by shredding the cooked chicken, and finely chop the onion, scallions, celery and pecans.
2. Add everything to a mixing bowl and combine. You may need a little more or less mayo, depending on how creamy you like it. Season with salt and pepper.
3. Refrigerate, preferably overnight so the flavors can develop.
Serve as it is, on sandwich bread, crackers, pitas, and lettuce wraps, the sky's the limit!
