This is such a popular recipe all year round, whether it's for a Thanksgiving table or a summer picnic, whenever you make this, it always goes fast and everyone asks for the recipe!

July the 4th is always a very popular time to make this and for any of you who do tailgating, this is a perfect salad to pop in your coolbox and take with you!

This salad recipe is incredibly easy and a real family hit! It's a great dish to take along to a potluck, have as party food, plus you can make it ahead and keep refrigerated.

You can be a little flexible with the ingredients, obviously, the corn and cucumber need to go in as they are the main ingredients for this delicious salad, but feel free to swap the peppers for a variety of different colors, or add some chopped celery or tomato too!

As for the dressing, it's simple to make and is a mix of Italian herbs and a hint of sweetness.

For best results, this salad tastes amazing when left to soak in the dressing so you get maximum flavor. So making it ahead the night before is a great idea.

Ingredients You'll Need

  • Fresh corn or frozen corn
  • Cucumbers chopped
  • Red pepper chopped
  • Green pepper chopped
  • Red onion chopped

Dressing

  • Italian dressing
  • Vinegar
  • Lemon juice
  • Sugar or sweetener
  • Salt
  • Pepper

Instructions

1. Cook corn until tender.

Rinse under cold running water or put in an ice bath; drain well.

2. Chop cucumber, red and green peppers, and onion.

Add to corn in a large bowl.

3. In a small bowl mix salad dressing with the remaining ingredients then pour over corn mixture and toss well.

4. Chill 2 hours before serving.

  • 6 cups ears fresh corn or 3 frozen corn
  • 3 cucumbers chopped
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 1 red onion chopped

Dressing :

  • 1-1/2 cups Italian dressing
  • 2 Tbl vinegar
  • 2 Tbl lemon juice
  • 2 tsp sugar or sweetener
  • 1 tsp salt
  • 1 tsp pepper

  1. I’m going to make this for a community feast. Will add chickpeas and marinate overnight then add avocado and maybe pasta just before serving

  2. I made this recipe, but cut the dressing to half a cup, I will leave it to marinade overnight, but this is so simple and easy to make , the taste is delicious!! Can’t wait to serve it tomorrow!!

  3. I made this today and it was delish! I cut the recipe in half and used green onions instead of red. I also used just enough Italian dressing to coat it all. It does taste like pasta salad without the pasta, which is great for me since I am gluten free. Thanks for the recipe!

  4. This was delicious!! I peeled and cut out the seeds of the cucumber and diced everything and it took me a little over an hour. Maybe bc I am not skilled with a knife like a chef? Also I did not like the dressing that recipe made, so I made my own. 1/4 cup each of white vinegar, canola oil, sugar–and it turned out amazing!! Just enough to coat and a little standing at the bottom. Will definitely make again!!

  5. I do either grill or oven grilled corn (cut off the cob), cherry tomatoes (cut in half) and I use English and regular cucumbers along with the original recipe. I love this salad!

  6. I made this for a cookout and it was delicious everybody loved it the only thing is the amount for the dressing seemed like a little bit too much I will adjust next time thanks for the new recipe!

  7. Too much dressing! I loved all the veggies but next time I’ll dress it like I would a salad. I had to strain it out but it was still really good.
