If you're looking for a simple and great-tasting variation of a pasta salad, then this recipe will work! It's simply delicious!

This easy pasta salad is very quick to make and ideal for lunch or to take along to a party or potluck.

For this recipe, we've used raw ingredients, which we cook for the salad. However, if you happen to have any leftover cooked salmon, pasta, and vegetables, this recipe is ideal for making up another meal from leftovers!

For the dressing, we've used a really simple basic dressing, made up of olive oil and lemon juice, with a dash of cayenne pepper for a little heat. Feel free to add your favorite herbs too if you like, such as a sprinkle of fresh chopped dill!

The salmon is perfectly cooked and moist, and full of flavor. Eaten together with the fresh ingredients in the salad, a perfect light meal on a warm summer's evening!

4 Persons

Ingredients

2 cups or 250 g pasta of choice.
1 cup or 100 g green garden peas
1 cup or 100g fresh green beans
5 oz or 150 g raw salmon
1 red bell pepper
1 cup or 100 g sweetcorn
Fresh Parsley chopped

Dressing:

4 tbsp olive oil
Salt and pepper to taste
1 & ½ teaspoons Cayenne pepper/paprika
A squeeze of lemon or lime juice (optional)

Instructions:

1. Cook the pasta as per package instructions, drain and rinse through with cold water. Leave to cool in a bowl.

2. Cook the salmon by adding a little olive oil to a frying pan, and add the salmon fillet and vegetables. Fry until cooked.

The salmon should flake apart nicely, and you should see the moisture inside the fillet if you break it apart. Be careful not to over cook the salmon as it will be dry.

Cook the vegetables so there is still a crunch to them.

3. When the salmon is cooked to your liking, put it on a plate and lightly flake it apart using a fork. Leave big pieces so you will be able to see pieces of salmon in the salad.

4. Add the vegetables to the salad first, combine well, then lightly fold in the delicate salmon pieces.

5. In a small bowl, make up the dressing by mixing it all together then drizzle over the salad and enjoy!

*You can serve this salad warm or chilled.
