
Bite into one of these little monsters and you get a gentle crunch from the cornmeal, the creamy flavour of creamed corn from the light crispy batter and then a burst of pineapple juice from the pineapple itself! You may think this combination of flavours and textures are weird. Maybe they are.....BUT....they are so good!
You can also make fritters, simply follow the recipe but exclude the pineapple. Also very tasty!

Ingredients:
8 Medium sized Pineapple rings *****( to make the Special Corn fritters, leave out the pineapple rings!)
4 Tablespoons Cornmeal
4 Tablespoons All Purpose Flour
3 - 4 Tablespoons Cold Water (you may not need any water, depends how thick your creamed corn is).
5 Tablespoons Creamed Corn (Very Thick consistency)** If using canned cream corn it may be a thin consistency so do not add any water to the batter.
1/2 Tablespoon Vegetable Oil.
Pinch of Salt
1 Teaspoon Baking Powder

Instructions:
1. Add all the ingredients except the pineapple rings to a bowl and whisk.
2. Add the cold water last, and add 1 Tablespoon at a time and whisk until you get a thick consistency, so the batter stays on the back of a spoon. You may not need all the water.
*** You can make fritters without the pineapple, like in my photo above
3. Heat a non stick frying pan with a couple of tablespoons of vegetable oil. Submerge the pineapple rings into the batter and then gently place in the pan. Leave the rings in the pan for a minute or two until brown, and then turn them over to brown the other side. Place on kitchen paper to remove excess oil. Do this for all the pineapple rings.

I of course always want to give credit to the creator. I’ve also heard people say to ask before sharing so I’ve been leery about sharing since that incident.
