Bite into one of these little savory fritters and you get a gentle crunch from the cornmeal, and the creamy flavor of creamed corn from the light crispy batter! These little golden sweetcorn fritters are great for snacks, served alongside a dip such as sweet chili sauce or a BBQ sauce.

You can also serve these fritters as a side dish with pork chops, chicken nuggets or a nice stew.

These only take minutes to make and you can use canned cream corn or use our quick recipe to make your own homemade creamed corn.

Ingredients

4 Tablespoons Cornmeal
4 Tablespoons All Purpose Flour
3 - 4 Tablespoons Cold Water (you may not need any water, depends how thick your creamed corn is).
5 Tablespoons Creamed Corn (Very Thick consistency)
½ Tablespoon Vegetable Oil.
Pinch of Salt
1 Teaspoon Baking Powder

** If using canned cream corn it may be a thin consistency so do not add any water to the batter.

Instructions

1. Add all the ingredients to a bowl and whisk.
2. Add the cold water last, and add 1 Tablespoon at a time and whisk until you get a thick consistency, so the batter stays on the back of a spoon. You may not need all the water.

3. Heat a nonstick frying pan with a couple of tablespoons of vegetable oil. Add a tablespoon of the batter into the pan and repeat so you have enough fritters to fill the pan.

Leave the fritters in the pan for a minute or two until brown, and then turn them over to brown the other side. Place on kitchen paper to remove excess oil. Repeat until all the batter is used.
