Pineapple Corn Fritters

Bite into one of these little monsters and you get a gentle crunch from the cornmeal, the creamy flavor of creamed corn from the light crispy batter and then a burst of pineapple juice from the pineapple itself! You may think this combination of flavours and textures are weird. Maybe they are.....BUT....they are so good!

You can also make our creamed corn fritters if you'd like to make a variety.

These pineapple fritters are great served alongside our breaded chicken skewers, or our delicious Hawaiian chicken recipe, or as party food with a sweet chili dipping sauce or BBQ sauce.

This recipe was inspired by a childhood dinner I used to eat known as Chicken Maryland where you had fruit with the dish!

They're quick and easy to make and use simple pantry ingredients. So let's get straight to the recipe and please enjoy!

Ingredients

8 Medium sized Pineapple rings
4 Tablespoons Cornmeal
4 Tablespoons All Purpose Flour
3 - 4 Tablespoons Cold Water (you may not need any water, depends how thick your creamed corn is).
5 Tablespoons Creamed Corn (Very Thick consistency)** If using canned cream corn it may be a thin consistency so do not add any water to the batter.
½ Tablespoon Vegetable Oil.
Pinch of Salt
1 Teaspoon Baking Powder

Instructions

1. Add all the ingredients except the pineapple rings to a bowl and whisk.


2. Add the cold water last, and add 1 Tablespoon at a time and whisk until you get a thick consistency, so the batter stays on the back of a spoon. You may not need all the water.

3. Heat a non-stick frying pan with a couple of tablespoons of vegetable oil. Submerge the pineapple rings into the batter and then gently place in the pan.

Leave the rings in the pan for a minute or two until brown, and then turn them over to brown the other side. Place on kitchen paper to remove excess oil. Do this for all the pineapple rings.

        Great! I got yelled at by someone a few months ago about sharing a recipe but the original source had been lost throughout all the shares it had gone through by the time I saw it. I of course always want to give credit to the creator. I’ve also heard people say to ask before sharing so I’ve been leery about sharing since that incident.
