I decided to come up with a few different appetizers and snacks for the Festive Christmas and Thanksgiving holidays. One of my new recipes is these Festive Jack Daniel's Stuffing Balls. I'm not normally a fan of stuffing because I often find it can be too overpowering with herbs, or it can be dry, or if shop bought, overly salty.

So I decided to make my very own, using ingredients which I enjoy and also ingredients which will make the stuffing balls juicy and packed with delicious flavor, and of course with a festive tone to them. So here we have our Festive Jack Daniel's Stuffing Balls.

For this recipe, I've used ready-made pork sausagemeat. It's readily available in the chilled section of the supermarket. If you wanted to make your own, or you can't get hold of sausagemeat, you can also buy 1 lb of your favorite sausages, remove the skins and use that way.

For the flavor, I've added Jack Daniel's. This gives the stuffing balls a lovely flavor, but without the harshness of the alcohol because it is cooked off in the oven. The smell is quite amazing when it's baking too! The Jack Daniel's, combined with the cranberry sauce will also stop the stuffing balls from drying out so you will indeed end up with juicy little bites for your guests!

In this recipe, I've also used cooked chestnuts. You often see this ingredient in the baking section, and they come in vacuum bags or cans/jars, cooked and peeled.  Chestnuts give a wonderful additional layer of flavor, a little 'earthy', and a little sweetness. Yummy! The photo below is a bag I bought in my local Aldi store.

If you'd like to make ahead, you can mix up the ingredients and shape out the stuffing balls and then freeze them so they're ready for baking when you have your party.

You can serve these hot from the oven, say with a honey roast ham, like in the photo below, or simply as party food, perhaps even put a cocktail stick in each one to make it easier for people to serve themselves at a party.

So let's get straight to the recipe and see how we make these delicious Festive Jack Daniel's Stuffing Balls. Please enjoy!

Ingredients

1 lb or 450 g Pork Sausagemeat
2 Tablespoons Jack Daniels
1 Cups or 250 g Whole, Cooked Chestnuts
Zest 1 Orange
8 Slices Frozen White or Brown Bread, made in to crumbs
1 Egg, beaten
1 Teaspoon Dried or 2 leaves fresh Sage, chopped
1 Small Onion, Finely Chopped
2 Tablespoons Cranberry Sauce
Salt and Pepper to season
2 Tablespoons flour for rolling
1 Tablespoon of Olive Oil

Makes approx 30 Stuffing balls

Instructions

1. Preheat Oven to 375 F or 190 C.
Using a food processor, blitz the frozen slices of bread until fine crumb. Set aside. You may need to blitz the bread slices in batches depending on the size of your processor.

2. Very finely chop the chestnuts and onion, and transfer to a mixing bowl

3. Add the Cranberry Sauce, Jack Daniel's, orange zest and sage. Mix together until well combined.

4. Then add the breadcrumbs, again, mix until well combined.

Then add the sausage meat and beaten egg and combine. Season with salt and pepper.

5. Put the dusting flour in a small bowl, and taking a heaped tablespoon of the stuffing mixture, use your hands to shape into golf ball size pieces.

Roll in the flour then place on a baking tray lined with parchment paper. Continue to make the stuffing balls until all the mixture is used up.

6. Spray lightly or brush with some olive oil and place in the oven for about 10 minutes, giving them a toss halfway through. When golden brown, remove from the oven and serve warm.

You can also pan fry these in a skillet. Just add a very small amount of olive oil and fry until golden. Just shake or toss the balls so they cook evenly.

TIP: If you wish to make different shapes, roll out carefully on a work surface and using a Christmas shape cookie cutter, make various shapes. Note the baking time will be slightly different so keep an eye on them!
