Easy Carrot and Butternut Squash Mash! This is so delicious!
This is a very quick, easy and budget friendly recipe and the kids love it!
When all the squashes, turnips, swedes and other root vegetables are in season, this way of preparing a side dish makes for a nice change and is so full of flavor, and color too!
It's also a great way to cut down on carbs by leaving out potatoes in your meal altogether. I like to have this dish served with a roast dinner, pork chops, chicken pieces, or in fact pretty much anything!
You could also serve this carrot and butternut squash alongside one of our delicious Instantpot / multi cooker recipes such as our delicious slow-cooked liver, bacon and onions, or pressure cooker beef ribs. Yummy! I also love to pour lots of gravy all over! Quick and easy and oh so delicious!
This easy carrot and butternut squash side dish is also suitable if you wanted to make it into a puree for baby food, obviously, you will need to leave out the seasoning and butter. It's ever so easy to make and you can freeze in portions too.

Ingredients:
1 lb Carrots
1 lb Butternut Squash
***** Equal amount in weight of carrots to butternut squash.
1 knob / Tablespoon of butter (optional)
Salt and Pepper for seasoning
Instructions:
1. Peel the carrots and butternut squash, and cut into 1-inch cubes.
2. Place in a pan of water and cook until soft. Test with a knife to see if it is soft.
3. Drain the water.
****** This water is very good for making gravy or adding as stock to soups, stews etc, so you can freeze it once it is cooled, or discard.
4. Add the butter to the pan and using a masher, mash the carrots and squash until as lumpy or fine textured as you wish. Season with salt and pepper. You can also sprinkle a tiny amount of nutmeg and cinnamon if you wish. Then serve and enjoy!
Suggestions:
- Add some crispy bacon bits over the top too! That is also very delicious.
- Use the vegetable broth from your mash to make up some Onion Gravy. YUM!!

- 1 lb Carrots
