She's always coming up with great recipes, and here we have a great recipe for Roasted Garlic & Herb Vegetables, which Carina made to go with her Bacon Wrapped & Stuffed Pork Tenderloin , both of which you can BBQ or cook in the oven. The vegetables are very easy to prepare and have a delicious flavour.

Cook Time: 15 - 20 Minutes, depends on the size / thickness of the vegetables

Ingredients
zucchini, peppers, asparagus, and potatoes. You can choose, squash, any vegetables you like!
Olive oil
1 tbsp mince garlic
½ tbsp basil
½ tbsp thyme
½ tbsp oregano
½ tbsp parsley
1 tsp crushed red peppers flakes
½ tsp salt
Instructions
Prepare the vegetables so they are all the same size, (apart from the asparagus, keep those the full length). Place them in a baking tray and drizzle the olive oil and other ingredients. Mix them all well into the vegetables and bake in the oven at 375 F for 15 - 20 minutes, or place on the grill until done. Delicious!
*** Cook times will vary depending on how thick you cut the vegetables.
