This delicious recipe has been generously shared by one of our great cooks, Carina. She's always coming up with great recipes, and here we have a great recipe for Bacon Wrapped & Stuffed Pork Tenderloin which you can BBQ or cook in the oven. The tenderloins are moist and juicy, and of course full of flavour!

Ingredients
The Rub
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried oregano
½ tbsp Cumin seeds
1 teaspoon ground coriander
½ tbsp dried thyme
1 tsp Salt
The stuffing & Outer
Slices of your favourite bacon. Can be smoked if you like.
Instructions
1. Cut lengthwise the pork making sure you don't cut all the way. Fill the cut with two or three slices of bacon. Close. and secure with some kitchen string as in the photo.
Rub the pork with the dry rub, and then over the rub, wrap the pork with bacon (easier to do lengthwise, see pic). Tie it up.
2. Place in the oven or BBQ at about 275 F / 140 C / Gas 1. This is cooked on a low heat slowly to keep it nice and juicy, and of course delicious!
A Small loin took me 35 minutes.
The other pork loin uses the same rub. Simply does not have the bacon. The bacon wrapped one is more juicy, and it makes sense, but both were delicious. Allow to rest for 10 minutes then remove string and slice. Enjoy!
Serve the tenderloin with some Garlic & Herb Roasted Vegetables which Carina also made. Very delicious!
