Cook Time: 1 hour approximate

Yield: 1 or 2 potatoes per person
Ingredients
Allow 1 or 2 potatoes per person, depending on size.
chopped onion
garlic cloves
cayenne pepper
mustard seeds
150 grams or ½ cup butter
Sea salt to taste
Instructions:
1. Preheat Oven 220 C/ Gas 7 / 425 F
2. Slice the potatoes thinly, but do NOT cut right through to the bottom. Cut through to about 1 cm from the bottom. Place on a baking tray. **Line the tray with foil to avoid difficult cleaning.
3. In a pan, add all the other ingredients and stir until the butter had melted and the onion has softened.
4. Pour the butter mix all over the potatoes and bake for approximately 1 hour or until the potatoes are cooked and golden brown on the tops.
Sprinkle with salt and pepper to taste.
**** Tip : to avoid cutting right through the potato, insert a skewer right through, along the bottom of the potato so your knife reaches the skewer and it stops you from cutting right through.
You can also add other herbs and spices to your liking.

says:I think I’ll be making these tonight. I have some dried ground jalapeno that I’ll add and just because I’m a huge fan, some extra garlic in powdered form, Using the jalapeno in some of my dishes I have been able to eliminate the salt for health reasons and it adds a great flavor that I can either increase or decrease to our liking for the dish.
