Ingredients

The chicken
2 boneless, skinless chicken breasts
1 tablespoon of olive oil
1 teaspoon dried oregano
Salt and pepper to taste
1 clove of minced garlic
Lemon juice
Olive Brine
The Salad
4 cups mixed salad greens
1 cup cherry tomatoes, halved
2 English cucumbers, diced
½ cup Kalamata olives, pitted
½ Bell Pepper
½ cup crumbled feta cheese
4 hard-boiled eggs, sliced
Optional:
½ sliced red onion
½ sliced avocado
The Dressing
2 lemons, zest and juice
12 tablespoons of extra virgin olive oil
2 teaspoons oregano
salt and pepper to taste
Instructions
Prepare the Chicken:
- Preheat your grill or grill pan over medium-high heat.
- Season the chicken breasts with olive oil, dried oregano, minced garlic, lemon juice, salt, and pepper.
- Grill the chicken for 6-7 minutes per side or until cooked through and no longer pink in the center.
- Remove from heat and let it rest for a few minutes. Slice the chicken into bite-sized pieces.
If you are using left over cooked chicken or turkey, lightly fry off the minced garlic, lemon juice, and olive oil until translucent, then add to the cooked poultry with oregano, salt and pepper, and let sit for 20 minutes to infuse.
Assemble the Salad:
- In a large salad bowl, arrange the mixed greens as the base.
- Arrange the sliced grilled chicken, cherry tomatoes, diced cucumber, Kalamata olives, crumbled feta cheese, and hard-boiled egg slices over the greens.

Make the dressing:
Add all the dressing ingredients to a jar, tighten the lid, and shake until all of the ingredients are combined.
Any leftover dressing can be stored in the refrigerator for up to 2 weeks. Simply give the jar a shake before use.

To Serve:
Drizzle the Greek salad dressing over the salad or serve it on the side. Toss the salad gently before serving, combining all the ingredients and distributing the dressing evenly.
