This recipe is very flexible, you can use it for grilling, baking in the oven or even as a casserole. The star of the show is, of course, the simple yet tasty marinade. If you use Low Fat or Fat-Free yogurt, then the calories will obviously be less and there won't be any compromise on flavor.

I have made this recipe for mint and lime yogurt chicken on the BBQ and also in the oven. The end result is, of course, a little different when you BBQ because of the added flavor of the charcoals and smoke involved during the cooking process, so as with many BBQ marinades, you do need to add a little extra punch of flavor in order to override the general BBQ taste you get. If you BBQ I would recommend adding ½ teaspoon of peppermint extract to the marinade as the mint will not be strong enough to carry through from grilling.

Cooking in the oven also delivers great results, and you can choose to cook in the marinade or simply take the chicken out of the marinade and bake on a tray.

So let's get straight to this recipe and see how we make these delicious mint and lime yogurt chicken drumsticks. Please enjoy!

Ingredients

6 Chicken Drumsticks
4 Tablespoons of Plain, Low Fat or fat-Free Yogurt
Juice & Zest of ½ Fresh Lime
Salt & Pepper
1 cup of fresh mint leaves, washed and chopped
½ Teaspoon of peppermint extract (Optional)

Instructions

1. Wash and prepare the chicken by cutting slits in a diagonal across the thickest parts. I usually make a diagonal slit on both sides of each drumstick. This will ensure the marinade gets into the meat and also will give you even cooking throughout.

2. Wash and chop the mint leaves then place in a ziplock bag. Add to the bag the yogurt, lime juice, and zest, and if using the chicken for the grill / BBQ I suggest you also add ½ teaspoon of peppermint extract to avoid the mint flavor from being lost in the BBQ smoke and charcoal!

Then add the prepared drumsticks. Combine everything in the bag well, seal it and place in the fridge for at least 30 minutes. Overnight is even better!

3. When ready to cook, if using an oven, set to 180 C / 350 F / Gas 4 and either place the chicken on a baking tray or place the chicken and marinade in a casserole dish and bake until done.

Approximately 20 - 30 minutes, depending on how thick the drumsticks are.
If BBQ or Grilling, place the drumsticks on the grill and turn to cook each side until cooked.

You will notice, by making slits in the thickest parts of the drumsticks, the cook times will be less and also they will cook more evenly.

When ready, serve and enjoy! You can also add a squeeze of fresh lime for serving. Here I served the drumsticks with some grilled pineapple, what a great combo!

    Loved this recipe! Served it with mint peas and rice. Used the leftovers to make pita pockets with peppers, tomatoes, cucumber, lettuce and Serious Eats yogurt mint sauce. It was delicious!
