Honey Roasted Cajun Cashews are so addictive! They are super easy to prepare, and of course so flexible, in that you can change the nuts and seasoning to suit your own taste buds.
Here, I used cashew nuts with honey, Cajun spice mix and salt, and pepper. The combination of all those flavors works really well and this certainly makes for a great snack.
What equipment do I need?
To make these delicious honey roasted cajun cashew nuts, all you need is a baking tray, such as a large cookie sheet, a piece of parchment paper and of course, an oven, or you could even do these in the air fryer if you have one.

It took me only a few minutes to prepare so when I was using the oven anyway, I just made up a quick batch of these nuts and popped them in the oven whilst I had other things cooking.
Storing these nuts
Very easy and keeps in a container for quite a while. Mine lasted 2 hours and they were all gone, but I imagine they will store for a couple of weeks. Just give the container a good shake if the nuts stick together.
Great for snacks, parties and movie nights, nibbles at Thanksgiving and Christmas time, or give as gifts in little jars to your friends or family.
Can I use other nuts and seasonings?
Well of course! The recipe is just the same as far as how to prepare.
You can use peanuts, walnuts, pecan nuts or indeed a combination of nuts, and keep the recipe sweet by just using honey, or if you like the sweet and salty combination, add half a teaspoon of salt, or perhaps some curry powder, bay seasoning, paprika or another spice.
Really, the sky's the limit with how you want to season these so feel free to experiment. Perhaps make up a few different flavors out of one batch!

Ingredients
1 Cup Cashew Nuts
2 - 3 Tablespoons Honey
¾ Teaspoons Cajun Spice
¾ Teaspoons Salt
¾ Teaspoons Black Pepper
Instructions
1. Preheat oven to 350 F or 180C
2. Line a baking tray with parchment paper.
3. Place cashews in a mixing bowl.
4. Drizzle honey over nuts, season with Cajun spice mix, salt and pepper and mix well.
5. Spread out the nuts evenly on the lined baking tray
Bake in the oven until cashews are golden brown, approximately 10 minutes.
Allow to cool on the tray then store in an airtight container.
You make have to seperate them a little once they cool as the honey will make them stick. Once totally cool, they will harden slightly.
TIP: When you place the nuts in the container, they may be stuck together, so with the lid on, give it a really good shake and the nuts will separate.
