Cook Time
15 minutes
Yield
Will fit a 9 x 9 pan.
Ingredients
½ cup butter, softened
2 tbsp heavy whipping cream
¾ cup eggnog
2 cups sugar
14 oz white chocolate
1 Cup finely chopped Walnuts (optional)
1 Cup marshmallow cream
1 tspn nutmeg Plus extra for sprinkling
2 tspn vanilla extract
Instructions
1. Line 9×9 pan with foil and make sure you grease it very well.
2. Combine butter, cream, eggnog + sugar in heavy saucepan and bring to boil over medium heat, stirring occasionally.
3. Once boiling, reduce heat. Use a candy thermometer to reach 234°- soft boil stage.
Please note, if you have a thermometer the mix needs to reach 234 degrees, if not, as a guide, just boil for about 10 minutes, stirring and then if you fill a cup with cold water, drop a little bit of the mix into the cold water and if it’s ready, it forms a soft ball.
4. Remove from heat and add white chocolate, stir until melted. Add marshmallow cream, nutmeg and vanilla. Stir until all combined and smooth. Add walnuts if using.
5. Pour into pan and garnish with a bit more nutmeg.
6. Allow to cool at room temp completely. Several hours at least. Overnight is better.
7. Cut into squares and store in an airtight container in the fridge. Depending on how large or small you cut the fudge pieces, you could cut 10 across and 10 down the pan, to give you 100 pieces.

says:Could you melt regular marshmallows and substitute for the marshmallow cream?
Lovefoodies
says:Hi Patti, we haven’t had any reports back from anyone who has tried to melt the marshmallows so I’m afraid I can’t say if it would work. Sorry I can’t be of much help. if you do try it, please do pop back and let us know how it went
April J Harris

Ruth Cobb
says:Does this stay moist and creamy like most of the marshmallow creme fudges? I tried the white chocolate chips once and while the taste was good, it was hard. If I wanted to use the whipping cream but not the eggnog for those who don’t like eggnog (go figure), what would I use. Would some corn syrup have kept it creamier
?
lovefoodies
says:Hi Ruth, I only know people who have followed the recipe as it is say it is wonderful, so I’m afraid I don’t know of variations to this recipe and how it would turn out. As far as the egg nog goes, I do know that people who don’t like egg nog have been surprised and really enjoyed the fudge (maybe don’t tell them it’s egg nog!!!) So I’m sorry I can’t advise how it would turn out if you used ingredients other than the recipe. If you do try variations, please do let me know and I can add it to the recipe for others.
Holly Robinson
says:does this make 9×9 or 9×13 pan, the recipe is conflicting
lovefoodies
says:Hi Holly, thanks for raising the discrepancy. It is a 9 x 9 pan that is used. I’ve amended my typo to read correct now.
Thanks once again! Much appreciated.
Holly Robinson
says:Thanks, I am gonna make some of this, sounds yummy
lovefoodies
says:Please enjoy Holly. We’ve had great reviews back from our Facebook group from those who’ve made it. They all absolutely love it!
