The fact this easy recipe uses 5 different cheeses makes for a luxurious cheese packed dish! It's pure comfort food at it's best, and as far as the recipe goes, it's really easy. 

To save time, you can obviously buy ready grated cheese, but if you have some teenagers in the house, you can give them the task of grating the cheese. That always goes down well when they know they'll be having this mac and cheese for their dinner! 

Here, Peggy made it in individual oven pots for portion control and she has customized them to suit her family as some like with and some without breadcrumbs! But of course, you can also make it in one ovenproof dish and serve at the table.

It's certainly popular and the addition of Pepper Jack cheese adds another flavor dimension.

This recipe will also show you how we make a simple roux sauce, which will have the cheeses in it. When assembled, the mac n cheese is baked in the oven, and you get a wonderful crispy topping to add extra texture to the dish.

Ingredients

16 oz of cooked macaroni
4 oz Gouda
4 oz pepper jack cheese
4 oz extra sharp (white cheese)
4 oz of cream cheese
4 oz of Gruyere
1 cup of italian bread crumbs
2 cups of milk or cream
4 TBS butter
4 TBS flour
Pinch of nutmeg
A sprinkling of chopped parsley

Instructions

1. Shred all the cheeses and put in a bowl.

2. Melt butter and add your flour to start your roux sauce.

When you have let your flour cook down to get the flour taste out approx a minute or two add your two cups of milk or cream it's up to you calorie-wise.

After your roux starts to thicken add all your cheeses till well combined.

When combined grate over a pinch of fresh nutmeg ( if don't have fresh, jarred nutmeg will do. Just a pinch, or it will be overwhelming)

Nutmeg brings out the nuttiness of your cheeses if you didn't know this already.

3. Add the cooked macaroni to your oven dish or dishes if using individual dishes. 

Pour the cheese right over your cooked macaroni and top with your Italian bread crumbs and chopped parsley and bake on 425 F until top is golden brown. Enjoy!

    I was in the middle of making this, but I dropped one of my fucking AirPods in the cheesy sauce and now it won’t work, LOL. But overall it was a really nice recipe :)

    1. Hi Lisa, it is certainly a ‘rich’ dish! What I would advise is if you swap some of the cheeses for ones you can afford, as I do know some can be a little expensive, (that’s why this is called a luxury mac n cheese) but of course, swap out some of the more expensive cheeses for what fits with your budget. It will still be super tasty!
