I love this recipe because it uses simple ingredients and it's also very flexible. You can swap the seafood for anything you really like.

For this recipe of Creamy Garlic Seafood Pasta, I've chosen to use a frozen bag of cooked shrimp and some fresh mussels. You could also add some squid, clams, oysters, firm white fish, or any other seafood which you love.

If you choose to use mussels in your Creamy Garlic Seafood Pasta recipe, make sure you discard any mussels which are 'dead'. I've given some instructions below in the the first part of the recipe. It's really important that you don't try to eat any mussels which don't open once they're cooked.

The sauce I've made for this dish is a very basic creamy white wine sauce and simple to do. You can actually use this sauce for a chicken dish, or our creamy garlic mushrooms recipe. It tends to go with lots of ingredients and you'll most likely have what you need in your pantry.

When I last made this dish I served it together with my very simple Garlic Bread. I often make the garlic bread in batches and freeze so I've got some handy. It's delicious so be sure to try that recipe too!

For the pasta, feel free to adjust the quantity to suit the appetites of your diners.

Here, I've used Paglia E Feino which translates to 'Straw and Hay' pasta. It's like a tagliatelle but has 2 colors to the pasta, yellow and green.

The green is from spinach which is added to the pasta. I've never really managed to taste the spinach that much but I like the color that it gives so that's why I use it!

For big garlic fans, feel free to add a couple more cloves of garlic if you wish. I've used 2 cloves in this recipe which I think is just right but I know we do have some big garlic fans here so go ahead and add some more if you want to.

Ingredients

1lb or 500g Fresh Mussels in shells
1lb or 500g cooked shrimp
small glass white wine
1 shallot, finely chopped
2 cloves crushed garlic
8ox or 225g Cream Cheese, room temperature
salt and pepper to taste
4-5 Mushrooms, sliced
½ Zucchini, sliced into bite sized pieces
8oz or 250g Pasta such as Tagliatelle. I used Paglia E Feino which is a mixture of yellow and green for a nice color
1 lemon, cut in to wedges

Instructions

1. Prepare the mussels as follows.. *This is important!
Sort through mussels, tapping any that are open lightly on a surface to see if they close shut. Discard the ones that remain open, or any that are damaged (they have perished and are not safe to eat). Pull off the beard, and scrape any barnacles off using the back of a knife then rinse.

2. In a deep pan (I use a wok), add a drop of olive oil and lightly fry the shallot, garlic, mushrooms and zucchini until tender.

3. In a separate pan, cook the pasta according to the package instructions and set aside.

4. Add the mussels to the deep pan and combine with the shallots etc.
Add the white wine and turn the heat down to low. Place the lid on the pan and allow to simmer for 2 minutes. At this point, sort through any mussels in the pan which are closed. Throw those away as they will be no good.

5. Add the shrimp and the cooked pasta. Turn the heat up and stir everything together so it's all well combined. Add the cream cheese, and take 2 utensils, and move everything around in the pan so it's all coated. The cream cheese will turn to a liquid when mixed with the white wine and the heat, so everything should become creamy. Season with salt and pepper and serve and serve with a wedge of lemon
