Refreshing Shrimp Salad is a lovely salad which you can make ahead. There's also a great dressing recipe too!
This delicious recipe has been generously shared by one of our great cooks, Carina. She's always coming up with great recipes, and here we have Carina's Refreshing Shrimp Salad.
Carina has used Hearts of Palm which are similar in taste to artichoke. You can find this ingredient under the 'Brazil' section in most large supermarkets. If you can't find it, you can swap for another ingredient of your choice!

Ingredients
2 celery sticks
Half an English cucumber
2 medium tomatoes
2 medium carrots
3 hearts of palm *****
1 can of chickpeas
2 tbsp light mayonnaise
1 tsp ketchup
Cooked and peeled shrimp, as many as you like!
Salt and pepper to taste

Instructions
Cut everything into small cubes, add mayo and ketchup, salt and pepper, mix and voila,...even better if all veggies were cold from the fridge.
