The ingredients are basic ones which you will likely have in your kitchen already, and you can swap any of the cheeses to your favorite, or whatever you have in your fridge.
The kids love this easy mac and cheese, and it's possible for them to help you make this too!

Ingredients you'll need
- cooked macaroni pasta
- Gouda cheese
- Pepper jack cheese
- Extra sharp (white cheese)
- Cream cheese
- Milk or cream
- Butter
- Flour
- Nutmeg
- Seeded or Yellow Mustard
Instructions
1. Shred all the cheeses and put in a bowl.
2. Melt butter and add your flour to start your roux.

When you have let your flour cook down, gradually add the two cups of milk or cream it's up to you calorie-wise.

Add the milk in stages, stirring all the time to make the sauce smooth. You will get some lumps but don't worry, just keep stirring and they will go!

After your roux starts to thicken add all your cheeses until well combined.

When combined grate over a pinch of fresh nutmeg ( if don't have fresh jarred nutmeg will do Just a pinch now or it will be overwhelming) Nutmeg brings out the nuttiness of your cheeses if you didn't know this already. Add the mustard and combine everything.
3. Put the macaroni in a serving dish and pour the cheese right over your cooked macaroni and its ready. Garnish with some parsley flakes and enjoy. ** If you would like to brown the top, place under the grill/broiler for a few minutes until golden.
