Recipe by Vikki Spencer
Here's a little about our foodie friend Vikki's recipe:
My sister made this peanut butter pie for Christmas last year and I just loved it, but something was missing.

She had garnished it with chopped Reese's Cups, so I thought Hmmmmm, that is it!

So, I tweaked it and made it my own. I made some changes, and this is my take of Trish's Peanut Butter Pie.

This is absolutely the easiest and most delicious, decadent pie you will ever put in your mouth!

There is no cooking involved at all. Also, this pie freezes very well so you can make them up in advance so you can always have one in the freezer! It's a good thing.

Prep Time

15 minutes

Cook Time

4 hour chill time (minimum)

Yield

4 - 6 persons

6 or 9 inch regular, chocolate Graham Cracker or Oreo cookie pie crust (chocolate or Oreo taste best)
8oz or 225 g package cream cheese (softened)
8oz or 225 g container cool Whip
1 cup or 260 g peanut butter
1 ½ cups or 180 g powdered sugar (You can reduce the amount if you prefer a less sweeter pie)
2- tbsp milk

Instructions

1. In a large bowl, mix first five ingredient's, beating on medium speed until light and fluffy.

I freeze the peanut butter cups so they hold their shape while chopping.

3. Pour mixture into pie crust.

4. Chop another 4 to 6 peanut butter cups and sprinkle on top.

  1. My pie did not turn out high and fluffy like the picture. I’m wondering if the cool whip should of been folded in gently? I whipped it with the other ingredients like the recipe said to. Any ideas on what I did wrong?

Hi Dani, sorry your pie didn’t come out as high, hopefully it was still very tasty though! Your idea of folding the cream in gently should do the trick so you don’t loose too much air.
      Hope you’re having a lovely 4th July!

  2. This looks delicious! I would like to make it to take with us for Thanksgiving out of town (4 hour drive). If I freeze it the night before and take it out of the freezer as we are leaving, do you think it would be thawed by the time we got there? Or do you think that is too much time to be room temp? Thanks for the help! :)

    1. Hi Stacy, I think it will be ok however, what I would be inclined to do (I am assuming you will have heating on in the car too!) is place the pie in an ice box if you have one, you know, like the picnic boxes you can get, just inacase your car does get too warm. It would be a shame for it to go sloppy of course!! Or if you haven’t got an ice box, perhaps a cardboard box with those ice blocks you get for picnics wrapped in a tea towel, just to slow down the defrosting time. Hope that helps!
Have a lovely holiday and safe journey!
