Banoffee Pie! What a wonderful dessert! It's so easy and quick to make, and well.... simply delicious!

I've made the recipe very easy and cut out a few steps where you could make it completely from scratch, such as the caramel etc, so you can have this ready to serve in absolutely no time at all.

If you wanted to make your own caramel, we have a great recipe for making dulche de leche. We've just used readily available caramel flavored sweetened condensed milk which you can buy in the stores.

To add a twist, you could also combine ¼ teaspoon of sea salt to the caramel to give it a salted caramel flavor!

It's one of those pies that will always be the first to disappear at a party, so if you're planning on making this for a gathering, I would suggest you make a few! You can also make a huge version in a 9 x 13 pan, simply increase the ingredients.

Ingredients

The Base

2 ½ oz or 75 g melted butter
8 oz or 220 g Digestive Biscuits or Honey Graham Crackers

The Filling

1 Can of Carnation or Eagle Brand Caramel flavored Sweetened Condensed Milk
2 bananas
1 ½ Cups or 10 fl oz or 300 ml carton whipping (heavy) cream, or cool whip
2 Tablespoons Powdered sugar (if the cream is not sweetened already)
Grated chocolate, to decorate

Instructions

1. In a bag, crush the biscuits/graham crackers until fine. Transfer to a bowl and add the melted butter and combine very well.

2. Transfer to a greased 8 or 9 inch spring form pan and pat down the mixture until it is even and firm. I use the bottom of a glass to get it really firmly packed.

3. Spread the caramel all over the base then add the sliced bananas. Save a few slices for the topping if you wish. You can also hold back a few spoonfuls of caramel to drizzle on the top for decoration.

4. Whip the cream if not already whipped, adding powdered sugar to your taste. Then spread the cream over the caramel and decorate with banana slices and grated chocolate.

5. Chill until ready to serve.

TIP: If you are not serving immediately, squeeze some lemon juice over the banana slices to stop them turning black!
