This is an incredibly quick, easy and flexible recipe which allows you to make ahead, or serve right away. I am not the world's biggest fan of Brussels Sprouts, but I will eat them... if they are not boiled to death and also taste nice with some other additions, such as BACON!
I really love this recipe because each time I make it, I do something different, adding some other bits and pieces like walnuts, or cream cheese, sometimes I'll add some breadcrumbs over the top with a sprinkle of cheese and pop under the broiler/grill until golden.
So really, you can make this recipe up to suit how your family enjoys eating. It's also convenient because you can make ahead and keep warm in the oven until you're ready to serve.

If you have time, do try my suggestion with the addition of cream cheese below. It is amazing! Add a sprinkling of chopped herbs, such as parsley or a pinch of oregano, a squeeze of lemon juice.... it really is endless! The choice is yours, so please enjoy!

Ingredients
1 lb or 500 g Brussels sprouts, halved lengthwise
4 - 5 rashers of bacon, chopped
2 tablespoons butter
2 cloves garlic, minced
Freshly grated Parmesan cheese (optional)
Salt and pepper
½ cup roughly chopped walnuts or pine nuts (optional)
Instructions
1. Prepare the sprouts by removing and old outer leaves and slice the old bit off the bottom at the stem. Then halve, lengthways. (like the photo)
2. In a saucepan , boil the sprouts until almost cooked, to your liking. Some prefer well cooked, some prefer a crunch. Test by inserting a knife and see if it is soft enough for you. Drain and set aside. (Note: if you are adding the cream cheese suggestion, reserve a couple of tablespoons of the sprouts water to add when you add the cream cheese to 'loosen up' the sauce at the end).
3. In a pan large enough to fit all the sprouts, add the chopped bacon. No need for oil as the fat from the bacon will be enough. Fry until cooked, or crispy, to your liking.
4. Add the sprouts to the bacon along with the butter and garlic, over a medium heat, tossing so everything is nicely combined.
5. Season with salt and pepper then serve with some freshly grated Parmesan cheese if you wish!

TOP TIPS! Some other ways to change this recipe up :
- add some roughly chopped walnuts or pine nuts at the same time you add the sprouts
- sprinkle some grated cheese and or breadcrumbs over the top and place under the grill / broiler until golden and melted
- add some onion with the bacon
- Add a couple of tablespoons of Cream Cheese at the end and stir through. (this is REALLY tasty!)
Serve hot with anything you like! I often make this recipe to serve with some pasta or as part of a roast dinner.
You can transfer to an oven-proof dish and cover with foil, keep on a low setting in the oven until you're ready to serve.
