Nanny Pat has made some Pumpkin Cupcakes, together with her own frosting, and of course do you see those little candy corn treats decorated on the tops?
Nanny tells me this recipe is super easy to make, and she had great fun decorating them!

The cupcakes are light and fluffy, and the frosting is so delicious, infused with vanilla, this is a creamy delicious cream cheese forsting!

If you have any candy corn or Halloween treats leftover, you can easily decorate the tops of these cupcakes with whatever candy you have left over. Be creative and have fun!

What you need

cupcake pan (for 24) and liners

Ingredients

The cake batter

spice cake mix
pumpkin Puree
large eggs
vegetable oil
water

The Frosting

confectioners (powdered) sugar
cream cheese
softened butter
vanilla

For decorating the tops

orange morsels, candy corn, and jelly candy pumpkins

Instructions

1. Preheat oven to 350° F. Paper-line or grease 24 muffin cups. I used pumpkin patterned cupcake liners.

2. Mix the cake mix, pumpkin puree, eggs, oil, and water in a mixer bowl until all combined. Mix for 2 -3 minutes.

3. Pour batter into muffin cups, filling ¾ full.

4. Bake for 18 to 23 minutes or the toothpick comes out clean. Allow to cool then prepare the frosting.

Make the frosting:

1. Cream together the cream cheese, butter, and vanilla, then add confectioners sugar a little at a time and use whatever color you would like. I used a little red and yellow coloring to get the orange color.

2. Decorate with orange morsels, candy corn, and jelly candy pumpkins

  • 15 oz can Pumpkin Puree
  • 3 large eggs
  • ⅓ cup vegetable oil
  • ⅓ cup water

The Frosting:

  • 1 ½ Cups sifted confectioners sugar, powdered
  • 4 oz . cream cheese
  • ¼ Cup softened butter
  • ½ tsp . vanilla
