Nanny's Pumpkin Cupcakes. A very fun and easy recipe. Great for the young ones to help with decorating too!

Nanny Pat has made some Pumpkin Cupcakes, together with her own frosting and of course do you see those little candies decorated on the tops?
Nanny tells me this recipe is super easy to make, and she had great fun decorating them! So let's see how Nanny made her cupcakes.

What you need: cupcake pan (for 24) and liners

Ingredients

The cake batter:

1 package (18.25 oz.) spice cake mix
1 can (15 oz.) Pumpkin Puree
3 large eggs
1/3 cup vegetable oil
1/3 cup water

The Frosting:

1 1/2 Cups sifted confectioners (powdered) sugar
4 oz. (1/2 of an 8 oz. block) cream cheese
1/4 Cup softened butter
1/2 tsp. vanilla

For decorating the tops:

orange morsels, candy corn, and jelly candy pumpkins

Instructions

1. Preheat oven to 350° F. Paper-line or grease 24 muffin cups. I used pumpkin patterned cup cake liners.

2. Mix the cake mix, pumpkin puree, eggs, oil and water in a mixer bowl until all combined. Mix for 2 -3 minutes.

3. Pour batter into muffin cups, filling 3/4 full.

4. Bake for 18 to 23 minutes or toothpick comes out clean. Allow to cool then prepare the frosting.

Make the frosting:

1. Cream together the cream cheese, butter and vanilla, then add confectioners sugar a little at a time and use whatever color you would like. I used a little red and yellow colouring to get the orange colour.

2. Decorate with orange morsels, candy corn, and jelly candy pumpkins
