Oh boy! If you love apples and cake then this Amazing Toffee Apple Cake is just the recipe for you!

There's layers upon layers of apples, with a gentle sprinkling of cinnamon and a slight background flavor of toffee sandwiched amongst layers of soft fluffy cake!

This is really quite delicious! When you bite into a slice of this Cake, the texture is lovely.

You get a slight bite from the apples, and a burst of sultanas, together with a lovely cake which is as fluffy as a feather and the flavors shout out it's Fall season!

The aroma when this is baking is wonderful. You get a delicious smell of cake baking together with the toffee and a gentle aroma of cinnamon.

The recipe itself is ever so easy to make, and budget-friendly too.

Fortunately for me, I have a kind neighbor who has tons of apples, so each week, I end up with a bag full of apples so of course, I will make cake because anyone who knows me will know I love a slice or three of cake!

After I baked the cake I gave a few slices to my neighbors (who gave me the apples) and I got a thumbs up right away and they both said how amazing it was so it's certainly one you must try and I hope it will become a keeper recipe for you!

As far as the sultanas go, I choose those rather than raisins because they're juicier and bigger. Obviously if you find it hard to get them where you live, by all means use raisins, or indeed dried cranberries if you'd prefer. It will still taste amazing.

The Amazing Toffee Apple Cake was made as part of our 30 Day recipe Challenge which I participate in each month with a group of talented bloggers. This month happens to be titled Amazing Desserts, so yep.... I've submitted this recipe simply because it really is amazing!

Serves

12 slices

Ingredients

¾ cup or 175 g softened butter
¾ cup or 175 ml milk
⅔ cup or 225 g regular sugar
⅔ cup or 125 g light brown sugar
3 eggs (lightly beaten)
4 Tablespoons Toffee Sauce, divided *
1 ¾ cups or 225 g Plain / All purpose flour (sieved)
1 tsp baking powder
½ tsp salt
1 ½ teaspoons Ground cinnamon
½ Cup or 60 g Sultanas or raisins (you can also use cranberries if you wish)
3 Medium Apples, peeled and sliced
Squeeze of lemon juice

You can use store bought toffee sauce (such as what you would use over ice cream or pancakes from the baking section), or make our own toffee sauce which can be found in our Sticky Toffee Pudding Recipe

Instructions

1. Heat oven to 170 C, Gas 3, 325 F. Grease and line an 8 inch square baking pan.

2. Sieve the flour, and add the salt and baking powder to the flour together with 1 teaspoon of cinnamon.

Peel and core the apples and slice so they are about ¼ inch thick, then place in a bowl and add the remaining cinnamon, together with a squeeze of lemon juice and 1 tablespoon of sugar from the main sugar ingredients.

Give the slices a toss so they are all coated evenly. (Divide the sliced apples in to 3 because there will be 3 layers of apples in the cake).

3. Use a mixer and cream the butter and all the sugar until a pale light colour. Add 2 Tablespoons of toffee sauce and combine.

4. Slowly add the beaten eggs to the mixer, on a low speed setting, a bit at a time.

5. Add half the milk with half of the flour, keeping the mixer on a slow speed. Once combined, add the remaining milk and gently fold in the remaining flour until combined and the sultanas.

6. Line the bottom of the pan with a layer of sliced apples. Then add HALF of the cake batter and cover that with another layer of apple slices. Finally, add the remaining cake batter and finish off by covering the surface with the remaining apple slices.

7. Place in the oven for 1 hr 10 minutes to 1 hr and 20 minutes.
Please do test if the cake is done by using a skewer and poke it in the middle to see that it comes out clean. If your cake needs a little longer, you can cover the top with some foil if you think it is getting too brown.

8. When the cake is done, brush 2 tablespoons of toffee sauce over the top of the cake whilst it's still hot. Then allow the cake to cool before slicing.

    1. Hi Candace, It sounds like it didn’t bake for long enough, assuming you followed all the correct ingredient measures, the cake should turn out properly baked. Maybe next time, try leaving it in the oven for a little longer

      1. I’ve done this cake 4 times now (by popular demand) and I always have to leave it in for 10-15 minutes more than the recipe asks for

  1. Because of the wording in the instructions, I only used the white sugar and not the brown….. I would do it again the very same way. VERY tasty indeed and worth doing over and over
