Ingredients

Gingerbread Snickerdoodles, ingredients

¾ cup or 170 g unsalted butter, softened
½ cup or 100 g granulated sugar
½ cup or 100 g light brown sugar, packed
One large egg
1 Tbsp vanilla extract
¼ cup or 170 g molasses
1 Tbsp ground ginger
1 tsp ground cinnamon
2 tsp baking soda
2 cups or 250 g all-purpose flour

For the cinnamon sugar coating:

Granulated sugar
Ground cinnamon

Instructions

  1. Preheat your oven to 350F or 180C and line baking sheets with parchment paper.

2. Whisk together the cinnamon and sugar in a small bowl for the coating. Set aside.

3. In a large bowl with a stand mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.

4. Beat the egg, mixing well after each addition. Then, stir in the vanilla extract and molasses.

5. In a separate bowl, whisk together the dry ingredients: flour, ground ginger, cinnamon, and baking soda.

7. Scoop the dough into balls and roll them in the cinnamon-sugar mixture, coating them evenly.

8. Place the dough balls on the prepared baking sheets, leaving a couple of inches between each cookie for spreading.

9. Bake for 8-10 minutes or until the edges are set and the centers are slightly puffed and cracked. The cookies will continue to cook as they cool on the baking sheet.
