Creamy Oreo Baked Cheesecake! This is a wonderful baked cheesecake that is so popular at parties and potlucks. It's a nice easy recipe and great if you want to make it ahead and chill overnight until ready for serving. For all you Oreos and chocolate fans, this is the recipe for you!

The addition of the chocolate ganache and caramel sauce drizzled over the top simply adds to the 'wow' factor!

With every bite of this Oreo cheesecake, you get a nice chocolate cookie texture from the Oreo base, then a lovely rich creamy texture from the vanilla cheesecake which is bursting with pieces of oreo cookie too!

This easy-baked cheesecake can be made ahead of time and simply refrigerated until you're ready to serve. So if you're planning a birthday party or anniversary celebration, you could easily make this the day before so you don't need to be rushed.

Ingredients

For crust

Oreos
butter softened

For cheesecake

cream cheese, softened
Greek yogurt
sugar
vanilla
eggs
Oreos, chopped

For topping

Oreos, roughly chopped
Chocolate ganache *see below
Caramel Sauce

To Make your own Ganache

Heavy Cream
Chocolate Morsels

Instructions

1. Preheat oven to 325 F or 170 C.
Line the base of a deep 7-inch springform with parchment, then wrap the outside of the tin with foil. I usually just clip the parchment and foil together onto the springform pan and wrap another foil outside. This way I can remove the whole cheesecake from the tin base instead of serving together with it.

Make the Crust

2. Place Oreos and butter into a food processor and blitz till crumbs. Put the mixture into the tin and press down firmly. Bake for 10 mins and let cool.

Make the Filling

3. Place cream cheese and sugar in a mixer and beat until smooth. Add all other ingredients except Oreos and mix again until smooth.

4. Stir in chopped Oreos and pour the mixture into the prepared tin.

5. Bake in a water bath for 10 mins then lower the temperature to 300 F or 150 C and bake another 45-50 mins. When the cook time is up, switch the oven off and leave the cheesecake in there for 1 hour so it can cool gradually. (this will avoid surface cracking, see here to read more about how to avoid cheesecake surface cracking).

6. Remove the cheesecake from the oven and let it continue to cool completely, then refrigerate for at least 6 hours, overnight is better.

7. When ready, remove the cheesecake from the baking pan by first running a knife around the edges and then releasing the spring form. You should be able to easily slide the cheesecake (carefully!) onto a suitable serving plate.

8. Add the chopped Oreos on top in a heaped pile and drizzle chocolate ganache and caramel sauce on top the Oreos. Enjoy!

To Make the Ganache

9. Heat cream and chocolate in a pot until smooth and cool for 10 mins then drizzle over the top of the cake how you like!
