Our Turtle Cheesecake is always a popular cheesecake recipe and is often made for celebrations or during the holidays such as Easter, Thanksgiving, and Christmas time.

Ingredients

The Cheesecake 

4 packages of cream cheese
2 tsp vanilla
¼ cup corn starch
¼ tsp salt
1 ¼ cup sugar
4 eggs
1 cup heavy cream

The Crust

¼ cup butter - melted
1 ½ cups chocolate wafer cookies without frosting in them. e.g Chocolate Graham's Crackers etc, or use plain Graham Crackers if you prefer.

The Topping

1 cup semi-sweet chocolate chips
1 cup chopped pecans
1 cup caramel sauce / Dulce De Leche. Here's our recipe if you'd like to make your own dulce de leche.

Instructions

Prepare an 8 - 9 inch springform by greasing the inside and wrapping foil on the outside to prevent water from entering through during cooking. Set aside. You can read more here about how to avoid cheesecake surface cracking and water baths when baking cheesecakes.

Make the Crust

1. Using a rolling pin and place the cookies in a zip bag and bash them until breadcrumbs, or use a food processor. (The photo below shows the crust using plain cookies and not chocolate.)

2. Add the melted butter to the cookie crumbs and combine well.

Then place the crumbs into a greased 8 - 9 inch Springform pan. Use the back of a spoon or your hand and push the crumbs down in the pan to make it firm. If the crumbs are loose, the base may fall apart.

Make the Cheesecake Filling

1. Preheat oven to 325°

2. In a large mixing bowl, whip the cream cheese until fluffy then add vanilla, cornstarch, and salt. Whip to combine. Add the sugar and one egg at a time, combining as you are adding the eggs.

3. Fold in the heavy cream then pour the batter into the pan.

4. Place the springform pan in a roasting tray and pour hot water into the tray so it comes up about ½ way high up the springform.

5. Bake the cheesecake for 1 hour and 15 minutes. The center should have a slight wobble to it.

6. Remove from oven and add chocolate chips, pecans, and caramel sauce / Dulce De Leche

7. Return to the oven and bake for an extra 15 - 20 minutes.

8. Remove from oven and allow cheesecake to cool. Once cooled, cover and refrigerate until serving.
