Turtle Cheesecake! Oh boy! We've got a lovely dessert recipe for you to enjoy today! Our Turtle Cheesecake is always a popular cheesecake recipe and often made for celebrations or during the holidays such as Easter, Thanksgiving and Christmas time.

When you take a look at the ingredients, you will see this cheesecake is certainly one for celebration and luxury! Chocolate, caramel, creamed cheese.....oh my goodness! The topping for our Turtle Cheesecake give you a lovely texture with every bite. The crunch from the chopped pecans and the sweetness from the caramel sauce, combined with the rich creamy cheesecake filling is just delicious!
This is a wonderful dessert and very popular, and the recipe shown here is a generic Turtle Cheesecake recipe, and of course you can add your own twist to it by making a few toppings different or keeping it just as it is!

Ingredients

Cheesecake 

4 packages of cream cheese
2 tsp vanilla
1/4 cup corn starch
1/4 tsp salt
1 1/4 cup sugar
4 eggs
1 cup heavy cream
Crust
1/4 cup butter - melted
1 1/2 cups chocolate wafer cookies without frosting in them. e.g Chocolate Graham's Crakers etc.

Topping

1 cup semi-sweet chocolate chips
1 cup chopped pecans
1 cup caramel sauce / Dulce De Leche See HERE how to make dulce de leche.

Instructions

Prepare a 8 - 9 inch springform by greasing the inside and wrapping foil on the outside to prevent water entering through during cooking. Set aside. You can read more here about how to avoid cheesecake surface cracking and water baths when baking cheesecakes.

How to Avoid Cheesecake Cracks

Make the Crust

1. Using a rolling pin and place the cookies in a zip bag and bash them until breadcrumbs, or use a food processor.

2. Add the melted butter to the cookie crumbs and combine well.

Then place the crumbs into a greased 8 - 9 inch Springform pan. Use the back of a spoon or your hand and push the crumbs down in the pan to make it firm. If the crumbs are loose, the base may fall apart.

Make the Cheesecake Filling

1. Preheat oven to 325°

2. In a large mixing bowl, whip the cream cheese until fluffy then add vanilla, cornstarch, and salt. Whip to combine. Add the sugar and one egg at a time, combining as you are adding the eggs.

3. Fold in the heavy cream then pour the batter into the pan.

4. Place the springform pan in a roasting tray and pour hot water into the tray so it comes up about 1/2 way high up the spring form.

5. Bake the cheesecake for 1 hour and 15 minutes.The centre should have a slight wobble to it.

6. Remove from oven and add chocolate chips, pecans and caramel sauce / Dulce De Leche

7. Return to the oven and bake for an extra 15 - 20 minutes.

8. Remove from oven and allow cheesecake to cool. Once cooled, cover and refrigerate until serving.
