One of our Lovefoodies supporters, Jeananne has kindly shared her own homemade recipe for us to enjoy and says she makes this vegan for Lent, and at other times, will often add ham or smoked sausage.
It's a very inexpensive meal to make, and very flexible too. So you could add other ingredients to suit, such as lentils or perhaps other grated root vegetables, maybe some smoked chicken pieces. Really, the sky's the limit!

Here, Jeananne has shared her recipe just how she makes it at home for her family, and it's certainly made with love.
Jeananne was telling me that there was a reason why she adds parsley in her soup, and this is what she explained, and a very touching meaning behind her cooking. Thank you Jeananne for sharing your story.
"SPRINKLES OF LOVE"
When my daughter was about four years old, she started taking an interest in what I was doing in the kitchen. She'd climb up on the kitchen stool and ask me one question after another. I had a spice carousel that she would twirl around and fiddle around with. I saw her pull the stopper out of one of the spice bottles, take a big whiff of it, and then put it back. As she moved through the different spices, she would make a face, ask what it was, and even stick her little finger in it to taste it.
She opened the bottle of Parsley and said that it smelled like 'nothing'. We had a talk about Parsley being one of the herbs that you can see after you add it to something, that was used to add color and make things look pretty. Our conversation turned to all the things we do that make things look pretty...decorating a birthday cake, putting ribbons in our hair, wearing fingernail polish. She thought for a long time and said, "Parsley is just like love, Mommy."
In years to follow, Julie's brother, Father and I watched Julie add Parsley to her ramen noodles, her celery stuffed with cream cheese, the deviled eggs, and she would gingerly add it to just about anything I cooked!
She was right! When we have love in our life, things just look different...it makes everything pretty.
I am cooking farfalle with sweet Italian sausage for dinner tonight...I will add the parsley and be grateful for that sweet little girl who taught me so much.
I never used parsley as much as I do now. When I do, I smile and think of her! Julie Denise Medin-Merideth. 21 November 1974~30 May 2001. Julie was a US Army Veteran who lost her battle with Large B Cell Lymphoma. Her only child, Matthew, was six years old. Her brother Jason donated his stem cells to her. This type of a stem cell transplant was fairly new. "
So please enjoy my recipe and I hope you too get to make some wonderful memories to last forever.
