Creamy Mushroom Soup! Oh boy! This is so delicious. For this recipe, I've used simple fresh ingredients and added some Spanish Chorizo sausage and croutons to give the soup an added flavor dimension and texture, so it's all made from scratch.

The mushrooms were on offer at the local market so I simply couldn't resist buying a box full. Feel free to add whatever type of mushrooms you wish, and if you can't get hold of chorizo sausage, try a nice smoked Italian sausage.

How do you thicken soup?

For most of the soups I make, I add potato. The natural starch in the potatoes acts as a thickening agent, so no need to use flour or cornstarch to thicken any soup. This is also great if you need to be gluten-free and want to use a thickener that is not flour-based.

Creamy Mushroom Soup with no cream?

You will see from the ingredients there is no cream added to this soup, and it is called a creamy mushroom soup. The trick we have used to make it healthier without cream is the addition of milk and just a little butter. This, combined with the potato in the soup, will give you a lovely creamy, velvety texture. Once you've made soup this way you won't ever need to go back to using cream in soup!

I've also added my own easy crouton recipe at the end here if you'd like to make some yourself. It takes a matter of minutes and the croutons will keep in an airtight container for a week or so.

This soup is lovely served hot with some nice buttered crusty bread fresh from the oven. It's quite filling so if you're serving this as a starter, you won't need huge portions.

Roughly 6 soup bowls

Ingredients

2 medium potatoes peeled & cubed roughly (if you want a really thick soup, add 3 potatoes, but this is a nice consistency!)
4 cups / 950 ml of vegetable stock
1.5 cups / 350 ml milk
1 medium onion chopped
4 Celery Stalks, Chopped
2 ¼ lbs / 1 Kg Mushrooms, sliced
1 tablespoon of butter
Salt & pepper to taste. (at the end)
2 Inches Chorizo sausage cubed small.
Fresh Flat Leaf Parsley for garnish

Instructions

1. In the large pan you will use for the soup, saute the mushrooms until cooked then drain and transfer to a dish.

2. Add a drop of olive oil and saute the onions and celery, then add the potatoes and vegetable stock and cook until potatoes are soft and cooked through.

2. Transfer the soup mixture and mushrooms to a blender and puree, then return to the stove and add your milk and bring to a gentle simmer.

Please note, it is at this point you may freeze the soup once cooled down BEFORE you add the milk. When ready to serve, defrost, add to the pan together with the milk then follow on at STEP 3. It freezes really well.

3. Once brought back to simmer, add 1 tablespoon butter (to give it a nice shine), salt & pepper to season. Taste the soup first before you add the seasoning!

4. When ready to serve, add the chorizo sausage to a small frypan and lightly fry until crisp. (No need to add oil).

Sprinkle on top of the soup together with some croutons and a garnish of parsley.
