A delicious homemade soup using fresh ingredients to give a sweet, colorful thick soup with a tang of ginger. Delicious served with warm crusty bread fresh from the oven.
This easy soup recipe has been generously shared by one of our great cooks, Carina. She's always coming up with great recipes, and here we have Carina's Carrot, Ginger & Apple Soup
It's certainly a delicious soup, full of flavor and would go great with some lovely warm
homemade bread rolls or a slice of Carina's Heritage Bread or Rye Bread.
The ingredients are basic and you're likely to have them in your pantry already. For those of you who are vegetarian, by all means swap the chicken broth for a vegetable broth to your liking, and you can also use plant based butter if you wish.

3 cups carrots 3 apples peeled and sliced 2 tbsp butter Grated ginger to your taste 4 cups chicken broth
1. In a pot put the onions, carrots, apples, and butter.
Cook on a medium heat for about 5 minutes.
2. Add the grated ginger and stir at medium heat for another 5 minutes.
3. Add the chicken broth, then turn the heat down ( between medium and low). Cover and cook for 50 minutes.
4. Transfer the soup to the blender and voila!
