It's certainly a delicious soup, full of flavour and would go great with some lovely warm bread rolls!

Ingredients

1 onion
3 cups carrots
3 apples peeled and sliced
2 tbsp butter
Grated ginger to your taste
4 cups chicken broth

Instructions

1. In a pot put the onions, the carrots and the apples and the butter.

Mix at medium heat for about 5 minutes.

2. Add the grated ginger and stir at medium heat for another 5 minutes.

3. Add the chicken broth, turn stove down a bit ( between medium and low). Cover and cook for 50 minutes.

4. Transfer soup to the blender and voila!
