This recipe is so flexible, you could also add some chopped ham to the chicken, use up left over turkey from Thanksgiving or Christmas, add a few mushrooms, peas or sweetcorn, the sky's the limit with what you can add. It's a great way of using up any leftovers you might have.

Ingredients

Chicken Alfredo Ziti Pasta Bake, ingredients

16 oz or 450 g of ziti pasta
2 cups or 300 g diced chicken (Breast or thigh meat)
Salt and pepper, to taste
2 tablespoons of olive oil
3 cloves garlic, minced
2 cups or 470 ml Alfredo sauce (store-bought or homemade)
½ cup or 120 ml of saved pasta water
1 cup or 100 g grated mozzarella cheese
½ cup or 50 g grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F. Grease a 9 x 13-inch baking dish with cooking spray or butter.
  2. Cook the ziti pasta according to the package instructions until al dente. Set aside ½ cup of pasta water for later.
  3. Season the diced chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken until browned and cooked, about 6-7 minutes. Remove the cooked chicken from the skillet and set aside.

  1. In the baking dish, combine the cooked ziti pasta, cooked chicken, garlic and seasonings.

5. Then add the Alfredo sauce and pasta water. Toss until everything is evenly coated.

6. Sprinkle grated mozzarella cheese and Parmesan cheese evenly over the top.

7. Cover the baking dish with aluminum foil and bake in the oven for 20 minutes. Then, remove the foil and bake for 10 minutes or until the cheese is melted and bubbly.

If you like a really crispy golden top, place the dish under the grill for 3-4 minutes until it is browned to your liking
