You get a lovely crisp from the pastry, a nice creamy custard filling bursting with bananas and of course that pie topping... OH MY GOODNESS! Whipped cream and more whipped cream makes this a delicious pie!
I really love this recipe. For the pie crust, you could make a few of them ahead of time and simply freeze and fill them with various pie fillings when you need.
This banana cream pie is also a lovely dessert top make for Easter or to take to a potluck or summer BBQ party. It always goes fast so be prepared to be asked to make it again and again!

Banana Pies are always so popular, and very easy to make. Here, Adelenne has made her own pie crust and pre cooked it, and of course, you can also buy a ready cooked pie crust. You choose whatever is easiest for you!

Ingredients
1 x 9 inch ready cooked Pie Crust OR make your own pie crust
For the Custard:
¾ cup icing (powdered) sugar
¼ cup corn starch
3 egg yolks
2 ½ cup fresh milk
2 tbs butter
1 ½ tsp vanilla
2-3 ripe bananas (to go in the filling once the custard is cold)
For the Topping:
1 cup heavy whipping cream
2 tbs icing (powdered) sugar
1 tsp vanilla
Grated Chocolate
Instructions
Make the custard as follows;
1. Put icing (powdered) sugar, corn starch, egg yolks, ½ cup of fresh milk in a bowl and stir. Set aside.
2. Put the rest of the 2 cups of milk in a pot with the butter and heat till just bubbling, stirring constantly. Remove from heat.
3. Add the hot milk a bit at a time to the egg mixture, stirring constantly to prevent the eggs from scrambling. Pour the mixture back into the pot and put back on the stove.
4. Stir until mixture thickens and set aside to cool.
Build the Pie
1. Slice up bananas and put a layer into the bottom of pie shell.
2. Put half the cooled custard into the pie, covering all the bananas.
3. Place another layer of sliced bananas and top with the rest of the custard. Chill overnight or at least 4-6 hours.
Make the Topping
1. Whip 1 cup of heavy whipping cream with 2 tbs of icing (powdered) sugar and 1 tsp of vanilla till stiff peaks.
2. Top the pie with the whipped cream and grate some chocolate over.

says:There is butter listed twice in the ingredient list, but it doesn’t state when to add it in…I used my own judgement and added 2 TBSP of butter in with the milk…
