Oh my goodness! This is one beautiful dessert! With layers of yellow cake, meringue, lemon curd and berries, making this might sound like a lot of work, but it's made in one pan, and you simply add the topping when you're ready to serve.

It's one of those desserts when you take a spoonful you can;t help but say "oooh",  "aahhhh", and perhaps some other sounds of enjoyment!

This recipe has been kindly shared by one of our Lovefoodies fans, Cindy Reams. Cindy wanted to make a lovely dessert for her hubby and so she decided on this. Well, it's now become a keeper and hubby named it 'Rock Star Dessert' simply because it really is a dessert that is out of this world. It now turns out Cindy's family and friends are asking for the recipe too!

The dessert can be made ahead, and you just need to add the topping when you;re ready to serve. If you add the topping and let it sit, you will find the meringue top will go soggy which you don't want! You can also choose berries of your choice. Here, Cindy used blackberries. Raspberries, strawberries or other soft berries would also work.

As for the nuts, we have crushed almonds on the topping. Again, choose nuts you love the most. For example, pecans, walnuts etc.

Ingredients

For the Cake Layer

2 Egg Yolks
¼ Cup Milk
1 Teaspoon Vanilla Extract
½ Cup Cake Flour
¾ Teaspoon Baking Powder
¼ Teaspoon Salt
½ Cup Sugar
6 Tablespoons Butter, softened

For the Meringue Layer

2 Egg Whites
⅛th Teaspoon Cream of Tartar
⅓ Cup Sugar
¼ Teaspoon Vanilla Extract

For the Topping

½ Cup Heavy Cream
½ Teaspoon Vanilla Extract
¼ Cup Lemon Curd **** Use our Lemon Curd recipe if you'd like to make your own
5 oz Berries
2 Tablespoons Orange juice
¼ cup nuts, roughly chopped

Instructions

Make The Cake

1. Preheat oven to 325 F and grease and flour or line with parchment paper, a 9 inch round baking pan.

2. Beat the egg yolks, milk and vanilla extract in a small bowl.

3. Using a mixer, add the flour, baking powder, sugar and salt then add the softened butter and combine until the mixture looks like crumbs. Slowly add the egg mixture until everything is combined. Transfer to the cake pan.

Make The Meringue

4. Add the egg whites and cream of tartar to a very clean mixing bowl and whisk until foamy. Add the vanilla extract.

5. Add the sugar slowly and keep whisking on high until stiff peaks form. The meringue will look nice and shiny.

6. Spread the meringue mixture evenly over the cake mixture. Use the back of a spoon to make some peaks over the surface then sprinkle the chopped nuts all over.

7. Bake for about 50 minutes or until you see the meringue has pulled away from the sides of the pan.

8. When done, allow to cool in the pan.

Make the Topping

9. In a bowl, whip the cream until stiff. In a separate bowl, stir the lemon curd to loosen it, then whip up the cream until stiff. Gently fold in the cream to the lemon curd and refrigerate until ready to serve. (minimum 30 minutes)

10. For the berries, place in a bowl with the orange juice and sugar (optional if your berries are very sour!) for 10 minutes.

To Serve

Remove the cake from the pan and place on a plate. Add the lemon curd cream topping and sprinkle with the drained berries.

NOTES:

    • Do not add the topping until you are ready to serve as this will soften the meringue.

 

    • If you prefer not to use whipped cream, you can simply top with lemon curd. You just need to give it a stir to loosen it so you can drizzle over the top.

 

    • You can make the cake part a day ahead and store it at room temperature, uncovered. (just pop one of those fly nets over it!)

    1. Hi Barbara, Lemon Curd is like jam, and is often used for cakes as a filling or as a spread, for example if you wanted to eat toast, you would spread it on the bread just as you would jam. It’s very delicious! You can find it in the jam section of your supermarket. It is also very easy to make your own.
