Celebration Banana Cake with Chocolate Mousse and Ganache - A real chocolate lover's dream!

Adelenne is a huge source of inspiration to our Lovefoodies Facebook group and always has a tasty recipe or two to share with us.

Here, we have Adelenne's recipe for her Celebration Banana Cake and the filling and frosting is made up of a chocolate mousse and then finally coated all over with a luxurious chocolate ganache. Certainly a chocolate lover's delight!

8 - 10 Persons approx

You will need

two 8 inch (20 cm) layer cake pans

Ingredients

The Cake

2 large ripe bananas
⅓ cup sour cream,
1 ½ teaspoons pure vanilla extract
2 large eggs
1 cup castor sugar
2 cups cake flour
¾ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground cinnamon
½ Cup / 5 oz butter, softened

The Mousse Filling and Frosting

2 cups of whipping cream
2 tbsp of butter
1 cup of chocolate chips
2 tbs powdered sugar

The Ganache

1 cup of heavy cream
¾ cup chocolate morsels

Instructions

1. Grease and line 2 x 20 cm (8 inch) round cake tins.

2. Preheat oven to 180 C / 350 F/ Gas 4.

3. In a food processor, blend banana, sour cream and vanilla until smooth. add in eggs and mix till combined. set aside
Sift flour, baking powder, soda, salt and cinnamon in a mixer.

4. Add butter and mix until combined.

5. Add half the egg mixture a little at a time, until smooth.

6. Pour into prepared tins and bake for 30-45 mins or till a skewer comes out clean.

7. Cool for 10 mins before turning them out of the tins on a wire rack to cool completely.

To Make the Frosting

1. Put cream, butter and choc chips in a heavy base pot and heat till smooth. Let cool completely.

2. Using a mixer with a paddle attachment, whip the chocolate mixture with the sugar until fluffy.

3. Spread on the top of one of the cakes and layer the 2nd cake over.

4. Frost the top and sides of the cake.

To Make the Ganache

1. Heat cream and chocolate in a pot until smooth and cool for 10 mins.

2. Pour mixture over the whole cake covering completely.

3. Decorate the side of the cake with chocolate chips and grate some chocolate on the top of the cake.
