Celebration Chocolate Banana Cake, delicious soft banana chocolate cake with a rich chocolate ganache frosting. Perfect for a party!

This delicious recipe has been generously shared by one of our great cooks, Adelenne. She's always coming up with great recipes which she either invents herself or adapts from various cookbooks to make her own. Adelenne is a huge source of inspiration to our Lovefoodies Facebook group and always has a tasty recipe or two to share with us. Here, we have Adelenne's recipe for her Celebration Chocolate Banana Cake which she made for her birthday, and it sure looks good!

The cake itself is a moist chocolate and banana flavored cake, the crumb is so light and fluffy! For the ganache, we've a combination of whipped cream and chocolate which will give you a lovely rich, silky finish all over the cake.

You will need

two 8 inch (20 cm) layer cake pans

Ingredients

The Cake

1 ¾ cup All purpose flour
1 ½ cup castor sugar (or regular sugar)
¾ cup cocoa powder
1 ½ tsp baking powder
1 ½ tsp bicarbonate of soda
½ tsp salt
1 ½ tsp vanilla
2 eggs
3 very ripe bananas, mashed
1 cup water
½ cup milk
½ cup canola oil

The Ganache

1 cup whipping cream
1 cup semi-sweet chocolate, chopped or morsels
1 Tbls unsalted butter

Instructions

1. Grease and line 2 x 20 cm (8 inch) round cake tins.

2. Preheat oven to 180 C / 350 F/ Gas 4.

3. Whisk flour, cocoa powder, baking powder, baking soda, salt and sugar in a bowl.

4. Using another bowl, whisk eggs, milk, banana, oil and vanilla. Add the wet ingredients to the dry and mix till combined. (included the cup of water)

5. Pour into the two pans and bake for 35-40 mins until a skewer comes out clean. Cool completely.

To Make the Ganache

1. Put cream and chocolate in a pan and heat over low heat until chocolate is melted, stirring constantly. Remove from heat and stir in butter. Let cool for 5 mins.

2. I leave it in the fridge for 10-15 mins and then, using a hand whisk, beat till fluffy.

To frost

I use a big dollop of ganache to spread on one of the cakes and put the 2nd cake on top. Then I spread the top and sides. Leave in the fridge to set. Drizzle chocolate sauce on top and top with Ferrero Rocher or Giotto chocolates.

  1. Going to try this recipe soon. Where do I add the cocoa powder though? It’s in the list of ingredients for the cake but not mentioned in the actual instructions.
