Mom's Homemade Apple Pie! What a pretty pie this is!

Crystal has kindly shared her family recipe with us and it's incredibly easy to make. Always popular and Crystal has been making this for many years, having had the recipe passed down to her from her mom. There's a lovely flavour of apples mixed with cinnamon and nutmeg, and contrasting with a nice crisp sweet pie crust.

You can freeze this homemade apple pie either before or after baking, so if you wanted to make ahead, say for Thanksgiving or to have a stock of pies handy, this will be perfect. If you want to freeze before baking, simply defrost at room temperature then bake as per the instructions below.

Crystal often makes this pie. Sometimes she will do a pretty lattice top and sometimes a completely covered top with a few decorations with leftover pastry. Whichever way you choose, it will be delicious!

If you've never tried making your own pastry before, give it a go! It is very easy and you can't compare shop bought with homemade. Once you've made your own, you will wonder why you had never tried before!!

This recipe uses a basic shortcrust pastry. However, you can also use our quick and easy flaky pastry dough recipe. you'll need to double the quantity to have enough dough for the base and top.

Prep Time: 15 minutes

Cook Time: 40 - 50 minutes

Serves: 6 - 8

Ingredients:

For the Pie Crust:

2 cups all-purpose flour
3/4 cup crisco ( I use butter flavored)
1/2 teaspoon salt
2 Tablespoons Sugar
2 Tablespoons (approx) cold water

Apple Pie Filling:

Approximately 7 apples cored peeled and sliced
4 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon grated lemon peel
1 to 2 teaspoons lemon juice
3/4 Cup Sugar (half granulated and half light brown)
1 Tablespoon Butter

Instructions:

1. Preheat oven to 425 F. Grease or spray a 9-inch pie dish.

2. Make the pie crust by adding the flour, crisco, sugar and salt in a large mixing bowl.

3. Use 2 round-bladed knives and cut together into a crumble, then add 1 tablespoon of cold water, and using your hands, start to bring the dough together. Add a little more water until the mixture comes together then place on a lightly floured surface and bring the dough together to form a ball. Cover with clear wrap and place in the fridge to chill while preparing the filling.

4. Make the apple pie filling. Core, peel and slice the apples and set aside.

5. In a bowl, add the remaining pie ingredients EXCEPT for the tablespoon of butter and stir to combine. Then add the apples to the mixture and shake it so the apples are nicely coated.

6. Take pie crust and divide into 2. Roll out one on a floured surface and then place in a 9-inch pie pan. Make sure the pastry comes up the sides of the dish and a little over the rim.

7. Place apples in bottom crust and dot with the tablespoon of butter.

8. Next roll out the 2nd crust. You can place this on top of the apples as a whole piece, or cut into strips and make a lattice top.

Notes for the pie top:
If you want to make a lattice top, cut into 1/2 inch wide strips, and place the strips lightly over the top of the pie. Then turn the pie dish 90 degrees and place the remaining strips, weaving them under and over the other strips. Once the strips are in place, gently push them down all around the edge of the pie dish to secure them.

If you want to use a single piece of pastry over the top of the pie, with a sharp knife, pierce 6 or 7 slits in the surface to allow the steam to escape when baking.

9. Brush the top with milk and sprinkle with sugar then place in the oven for 40 - 50 minutes until golden.

TIP: Put the pie on a tray to catch any bubble over during baking.

10. Remove from the oven and allow to cool for 20 - 30 minutes then serve warm or chilled.

    Made this pie yesterday. Crisco isn’t easy to come by here in Britain so I used a buttery spread that’s suitable for baking in the crust, as well as apple varieties available here – a mixture of Granny Smith and Braeburn. Also I only used 1/8 cup dark brown sugar and made the rest of the 3/4 cup up with regular as that’s all I had in! Baked it for 40 minutes and the very edges caught a tiny bit but they could easily be chipped off and it didn’t affect the taste at all – to me it tastes exactly like how I imagine proper American ‘moms apple pie’ to taste – absolutely delicious. The sweet crust really makes the difference I think. I don’t think us Brits are as good at apple pie as the Americans are. I definitely will make this again.
